  1. Was wanting something sweet tonight and happened to have an open can of pumpkin. 1/2 cup cottage cheese 1/4 cup pumpkin puree pumpkin pie spice and sugar (substitute) to taste (because I didn't measure...and I used the actual spices not the pre mixed stuff LOL) Stir together...tastes like pumpkin pie to me (although a bit chunkier )
  2. I'm cleaning out my closet today...funny stuff.
  3. I haven't lost anything in over 2weeks...actually I have but only because I gained 4 lbs and then lost the same 4 lbs. I need encouragement and possibly some advice.
  4. If you're not drinking enough your body will hold onto every little bit of fluid that enters it. I Garuantee that If you drink a ton of water over the next couple of days your weight will go down dramatically. (I personally shoot for 100oz per day)
  5. Get yourself a bottle (or 10) of sugar free coffee flavorings. and a Container of 0%-2% Plain Greek Yogurt. Use the coffee flavor syrups to flavor your yogurt.
  6. 1 small jar of salsa drained 2tb butter 2tb flour 1 cup milk 6 cups shredded cheese of choice but cheddar and monterey jack work really well. Salt to taste. Put salsa into a mesh sieve and allow to drain while you prepare the rest. Melt butter and whisk in flour making a paste. Whisk in milk and allow to cook until sauce is thickened (about 5 minutes) add cheese in thirds stirring and melting between each addition. Stir in salsa. use as a dip for veggies NUMMY

Breakfast this morning was 1 egg scrambled with 2 TB of cottage cheese, a little bit of pepper jack cheese 2 slices of bacon and about 2 TB's of fresh salsa. lunch is going to be Left over Taco meat (maybe 3-4oz ) with shredded cheese guacamole, salsa, and sour cream dinner is going to be chicken breasts cooked in Pasta sauce (I'll serve cheese ravioli for everyone else too ) with some sauteed zucchini onions and tomatoes. Snacks: 1/2 cup of cottage cheese with a TB of raspberry jam stirred in. Probably a venti skinny vanilla latte too. I'll also probably snack on some fresh veggies and crackers today if the mood hits too.
  8. Zucchini Relish is a canning recipe...super simple but it's A LOT of it. Perhaps you can cut it down LOL. 10 cups shredded zucchini (2 zepplin sized should work...or 3-4 mediums) 4 red bell peppers chopped (I used a mix of red and green) 3 onions chopped 5 TB Salt. Mix these up and put in the fridge overnight. In the morning rinse and drain well. In a stock pot combine. 1 quart Cider Vinegar 3 Cups Sugar (be careful if you use sugar substitutes some don't hold up too well to heat) 1TB Tumeric 1 TB Mustard Powder 1TB Celery Seed (optional) 1TB Red Pepper Flakes (Optional!!!) Add veg to the stock pot and stir together. Bring to a boil and then allow to simmer for 30 mintues. Makes approx. a dozen pints of relish...I rec. doing 1/2 pints and giving them as Christmas Gifts
  9. I recently found Wasa Crispbreads (www.wasa-usa.com) They are AWESOME! I can totally make myself a sandwich now without getting ill because of bread swelling in my tummy! It's FABULOUS!! I have a box of Crisp and Light variety. Serving size is 3 breads but for a sandiwhich I only use 2. 40 calories, 0 Fat, 8 Carbs. and about 1.3 grams of Protein. Tonight's sandwich was cream cheese, home made zucchini relish (zucchini, red peppers, onion, cider vinegar, sugar, mustard powder and tumeric) and some sliced deli turkey. Delish and a total of about 200 calories. 14 carbs, 20 grams of fat (all from the cream cheese LOL!) and 12 grams of protein. I know some won't be happy with the final carb count for this meal but when you're craving a sandwhich this crispbread will hit the spot!
  10. no, you won't be doomed to wear 20's the rest of your life. For more pear shaped persons it just takes a little bit longer to go down a size (HUG) it sucks I know.
  11. Can you say Water weight?? I'm a bad girl, haven't been drinking my water like I should, and I somehow got addicted to salted mixed nuts which probably isn't helping matters any.
  12. Is it crazy that I feel like I'm not losing enough/fast enough....like I should be a lot smaller at this point?? Feeling a little failurey it is crazy isn't it?
  13. I;m a couple days early (surgiversary is the 22nd) but couldn't wait. I have lost 50lbs since surgery. 70lbs total. I still have an average weight 6th grader to lose but I'll get there!

Breakfast Cottage cheese and 2 strawberries. lunch is probably going to be some turkey deli meat and guacamole wrapped up in some green leaf lettuce dinner will be Left Over chicken tortilla soup...sans tortilla Snacks a Protein coffee concoction (mcdonalds skinny vanilla iced latte with a scoop of chocolate whey protein in it) Havarti cheese w/ dill, and I think I have some toads in the cupboard still that I might munch on.

I once ate a 350 calorie cookie....yep...350 calories of delicious buttery shortbready goodness. and I felt guilty and horrible and like I had failed....and then I remembered...Normal people don't beat themselves up over a cookie. NORMAL people with a Healthy food relationship would just eat the damn cookie enjoy it and move on with their lives.

  17. :sigh I feel like I've been at the same weight forever. In reality it's been 11 days of up two down one...up half down half up down up down. It's annoying. Then I go back over the last month and realize that I've only lost 6lbs in the last 30 days...and I begin to wonder what I'm doing wrong.
  18. A friend passed along a pair of capri's that she never wore. They didn't fit last summer...not only did they not fit but the legs were super tight. I'm wearing them...they are still snug around the waistband and through the hips (Darn belly!) but are loose in the thigh and legs. They look normal.
  19. Prior to surgery I was waking with fasting glucose levels of over 200...often over 300. I started insulin 1 month prior to surgery which brought my fasting glucose down to 100-130 depending on the day. For surgery and for 24 hours after they had me on a Dextrose drip. My BS was 200 the morning after surgery they weaned down the dextrose. Day 2 after surgery my BS was in the 150's. I was advised to NOT take my insulin or Metformin unless my blood sugar remained over 150. I am 3 months out from surgery. My Fasting blood sugar this morning was 67.
  20. I had one person say that to me. I responded with "Would you tell a woman who had to have a c-section that she took the easy way out? No...because it would be rude and insensitive. Just like your comment was to me"

  22. 5 bites of chicken and rice comfortable...10 minutes later incredibly uncomfortable threatening to barf.

B- coffee 1/3 cup of bean salad and a cheese stick L half a cup of macaroni and cheese and half a hot dog (no bun) Didn't feel like making lunch so just ate what the kids were eating and remembered why I had decided on no more Pasta...misery for 30minutes. Le Sigh D. chicken breast, and fresh veggies. 1/3 cup of bean salad Snacks 1/3 cup of seafood salad (shrimp and crab) 2 bites of hubby's snickers ice cream bar spoon of Peanut Butter loads of Water
