Fast food and alcholic drinks??
I would avoid fast food for quite a while after surgery. I still can eat very little of it. As for Alcohol, empty calories. Not recommended during post-op phase, when you do use, count the calories. Fast food for me is a ready mixed protein shake!

Struggling Already
Try spreading out your protein shakes into four servings and use 1/2 at a time. This may help you feel like you are getting more frequent meals.

Having difficulty telling if I'm hungry
It can take time, and early on in the process, the gurgling noises are bowel sounds. Make sure you are drinking enough liquids and going regularly. If not, add fiber, stool softner or Miralax to your regimen. Being stopped up can cause pains.

Emotional preparation pre-surgery
If you must grieve... grieve for the shame you felt, and be happy about getting your life back on track. I can eat anything today that I could before surgery. I just control my portions, and don't use food as a crutch. You can do it if you truly WANT it! Emotional is normal at this stage and for a month or two after surgery. Hang in there though and you will not regret it! Post here if you need help or support!

weight gain
Sounds like water retention unless you are on a steady diet of milkshakes and ice cream. Make sure you are getting in 64 oz of fluids other than protein to keep from getting dehydrated.

1st week post op having hard time getting protein in
Try drinking 3 oz of protein shake at the top of every hour while you are awake. That should equal enough protein assuming you are awake for at least 12 hours a day. Smaller amounts more often worked for me. The rest of each hour I sipped water, crystal lite, etc. Good luck.
