OK, I am off to see what I need for my Queso dip for the Superbowl party....

That's easy!! Velveeta, Rotel and Jimmy Dean Breakfast sausage!

Jenn - I am really, really excited for you!!!!!!!!!!!!!!!!!! Maybe we should all bombard him with emails demanding that he give you the job. What's his address? :frown:

Judy, I taught pre-k for 5 years as an undergrad. I LOVED IT. Was able to do my homework during naptime, and got paid for it! Plus the days when I napped too. One time, the director came in and I was snoring (I didn't hear anything) and she woke me w/ a Super Soaker...hahaha.

Off to eat my bean salad lunch!

In my beginning chat days about 10 years ago I used to be on the computer until 2 a.m. Go to bed, get up at 4:30 a.m. and head to work at 6 a.m. It was a 62 mile drive one way. By rest time I would be in the rocking chair with a child on my lap asking... "Mrs. Case, are you sleepin'??" "Nope, just resting my eyes!". When it got to the point of me sleeping more and more during movies, etc, I said enough. I never went with that little sleep again. But I really, really enjoyed my chatting days. Made lots of good friends that I still chat with and visit today. Just not til 2 a.m.!!

LOL----I know what to put in it, I did not know what was in the cupboard, and what needed to go on my shopping list!!! It isn't like rocket science to make!!! Except.....no Jimmy Dean this time. I got a huge bunch of rolls of hot Owens brand sausage, marked down the other day so it is getting used instead----plus I add green chile to pretty much everything!!!

Sorry I've been MIA today.........

I've had about ohhhhhhh 100 back and forth emails today with my son's teacher and then my family..... long story that would be boring to all of you...

Also, Charles came up and took me to lunch..... OK.....

So I ate 2 beef tacos, and some Beans.....

I think the PA took out more than .3cc's

BUT........ this was ONE meal,

Breakfast was: WC oatmeal

So technically I'm STILL ON PLAN day 3

but I have yet to start my Water... so I'm going for my 1st liter in a minute (as soon as I hit submit)

scale was back down to 196 today...... whooohooo

can we get a 192 please? pretty please!

???? What is this Queso dip you (Kat and Terry) speak of w/ sausage??? Thinking about have a few friends over. Need something kinda yummy. OK you two...spill the receipe!

Here is the recipe for "Nacho Fondue" from Weight Watchers. I haven't tried it yet but I bought all the stuff to make it this Sunday.

Nacho Fondue

1 (16 ounce) can reduced-sodium black Beans, rinsed and drained.

2/3 cup chunky salsa

1/2 teaspoon ground cumin

1/4 pound reduced-fat pasteurized cheese product, cut into 1/2-inch pieces (3/4 cup)

5 cups reduced-fat tortilla chips

Combine the beans, salsa and the cumin in a medium saucepa; bring to a simmer over medium heat. Cook, stirring occasionally until the mixture is heated through, about 2 minutes. Add the cheese, stirring until melted.

Transfer the dip to a fondue pot or bowl, serve warm with the tortilla chips

Points value: 2

For deluxe-style nachos, sprinkle the dip with 1/2 pound cooked lean ground beef just before serving. Point value is increased by 1.

If anyone tries it before Sunday, let me know if you liked it.

Hey All~~

JENN!!!... You've got all my purple power... You're right... this IS your job!!

Pam... How did you miss all the posts about the surprise trip?? I go on & on about it... at least it seems that way to me!! DH is going to be in Mexico on a 10-day "photo safari" thing-a-ma-jig, so I wanted to do something fun for the kids so I thought up a surprise 4-day trip to WDW! The way I envision it unfolding is: Next Friday they'll go off to school like normal and I'll pack like crazy & hide everything in the car. They'll come home & I'll say "Let's go grab some dinner & have some fun." (since daddy'll be gone & it's Fri night)... then... I'll drive to the airport! Somewhere along the drive, one of them will ask "Where are we going?" and I'll shout out: "SURPRISE! WE'RE GOING TO DISNEY WORLD!" at which point they'll look at me & say, "No, really Mom... where are we going?" HA HA HA! They won't believe me!! They'll think I'm joking w/them!! So... at that point... I'll hand them each a musical Disney Hallmark card from their Aunt (my little sis) and inside are their Park Hopper passes... THEN they'll believe me! It's at this point that chaos will ensue & happiness will erupt in the car! Then... we fly down to Fla... and who meets us @ the baggage claim but the Aunt who gave them the passes! More fun!! Yay!! I AM SO DING-DANGED EXCITED ABOUT THIS!!

Oops... here comes one of them... gotta go... bbl!

The recipe sounds yum... we're having a few friends over for SB & I told everyone it's an "all-appetizer" menu...

I've been eating like crap the past few days... I start out well, but then get off track along the way... so AGAIN today I planned to be good... and have been so far... but now DH just called & wants us to meet him @ Carrabba's for dinner!! YIKES!

I make my queso like this....depending on how much you want you can double this...and it holds great in a crock pot on warm.

Brown a pound of hot sausage....drain off the fat, turn pan to low heat

throw in chopped green chile...onion if you want

a can of ro tel tomatoes

Then in a bowl I cut up a block of velveeta cheese--you can use the mexican style for extra flavor---and you can use store brand equivalent to Velveeta.

I usually add a can of nacho cheese----it is already in a liquid form, and keeps the velveeta from solidifying again if it gets a little cool.

I put the cheeses in the microwave to melt them the first time---then mix it all together in the crock pot, and let it simmer on low for 2-3 hours before we eat it.

I double this ... and we take several things that can be dipped in it. I am taking tortilla chips, and rolled tacos ( I get corn tortilla/beef, and flour tortilla/chicken---let them thaw just a bit, then cut them each in 3 pieces, then cook them--keeps hungry men from double dipping!!!) And then I make another crock pot full of the little smoked sausages---we refer to them as drunk weenies---they get a sauce of bbq---and a can of beer dumped in them to cook....and then the one thing I am famous for taking to Superbowl is food porn at its finest...it is called Death by Chocolate!!! Layered in a trifle dish is fudge pudding, white fudge pudding, brownies, fudge sauce, and topped with whipped cream, and chocolate shavings. A couple of years ago, I made a huge bowl of banana pudding---they ate every bite, but still ask for the chocolate!

Becky is making pulled pork sandwiches, and posole....and everyone else just brings whatever strikes them at the time. This year I think Manda may do the Death by Chocolate for me!

Superbowl teams do nothing for me this year, which is kinda bad----often times if I am involved in the game, I can avoid the kitchen---since I could care less about the game, not really wanting either team to win (!!) I am going to have to conciously avoid the kitchen~ wish me luck!!!

OK, we cleaned up the wood pile, split some wood, took down some things from over head----and decided to eat Chinese with Abbey---so at least some things got done today!!

Kat...I've made the Death by chocolate before, but I add toffee bits also. Won't be doing that THIS Superbowl!! I'll be making crockpot bbq meatballs instead.

Terry...great pics. Sure is different from the snow I'm looking at out my window! 2-4 more inches predicted tonight and tomorrow. Oh joy!

Got pineapple glazed spareribs in the pressure cooker and some cooked cabbage for supper. Yums

Michelle~ you really need to adopt me. I did not remember about the hubby. My problem is I check in from work and speed read through. Then I never do personals cause I can't remember who said what. I am sooo excited for you. I love surprises and can't wait to hear all about it. This morning I woke up @ 4:30 and in 10 min. I had thought of a gift for friends of mine who just finalized the adoption of their daughter (two guys...and the cutest little girl named Roxy). I was so excited about this gift that I told him about it at 7am. Not about the gift, but that I thought of one. I love surprises and gifts.

The gift if you wanna know is a silver frame w/ their family name engraved and the date of Jan. 29, 2008 when the adoption was finalized! Cute huh?

Thanks for the cheese receipes. If I have people over, I am gonna make one of these.

      Four days post surgery. I am sipping as fast as I can and getting NO WHERE near the goal of 60 - 80 grams of protein or the 64 oz of liquids. I just feel FULL. I don't know if it can still be the gas build up (I would think by now that would be gone) but it is a struggle to drink. And so far I have not had the nausea or spasms and don't want to wander into that territory by pushing too hard with liquids. I about passed out today as it was my most "strenuous" day. Went from second story to basement for shower and I was sure I was going to pass out. Looking back on my last few days I have had a total of less than 1000 calories. Am I just not getting enough nourishment in me? Once again a friday where I can't get ahold of the doc until Monday rolls back around so I am hoping maybe someone here has some experience on how to keep energy going. I do have fibromyalgia too and that may be where some added fatigue comes into play. How did you all fair with the goals the week after surgery?

      2 days until I fly out to San Diego to have my Bypass Surg. in Tiajuana Mexico. Not gonna lie, the nerves are starting to surface. I don't fear the surgery itself, or the fact that I'm traveling alone, but its the aftermath that I'm stressing about the most, after this 8 week wait. I'm excited to finally be here, but I am really dreading the post surgical chapter. I know its going to be tough, real tough and I think I'm just in my head to much now that the day i here. Wish me luck, Hopefully I'm one of the lucky ones, and everything goes smoothly. Cant wait to give an exciting update,. If there is anyone else have a June bypass or even a recent one, Id love to have someone to compare war stories with. Also, anyone near San Antonio Tx? See ya soon with the future me. 💜

        I'm in Houston so kind of near you and had the sleeve in Dec. Down 61 lbs. Feeling better. Was definitely worth it. I hope the everything is going well for you. Update us when you can!

        I am back home after my bypass surgery in Tiajuana. I'm post op day 4. Everything went great! I guess I'm one of the lucky ones who have not encountered much pain at all, no nausea thus far and I'm having no problem keeping down broths and water. Thank you for your well wishes. I cant wait to keep up this journey and have a chance at better health and simply better quality of life. I know there will be bumps in the road ahead, and everything won't be peaches and cream, but at least I have a great start so far. 😍

      I am new here today... and only two weeks out from my sleeve surgery on the 23rd. I am amazed I have kept my calories down to 467 today so far... that leaves me almost 750 left for dinner and maybe a snack. This is going to be tough for two weeks... but I have to believe I can do it!

      Hey everyone. I'm new here so I thought I should introduce myself. I am 53y/o and am scheduled for Gastric Bypass on June 25th, 2025. I'm located in San Antonio, Texas. I will be having my surgery in Tiajuana Mexico. I've wanted this for years, but I always had insurance where bariatric procedures were excluded. Finally I am able to afford to pay out of pocket.  I can't wait to get started, and I hope I'm prepared for the initial period of "hell". I know what I have signed up for, but I'm sure the good to come will out way the temporary period of discomfort and feelings of regret. I'd love to find people to talk to who have been through the same procedure or experience before. So I look forward to meeting you all. Hope you have a great week!

        I'm so happy for you! You are about to change your life. I was so glad to get the sleeve done in Dec. I didn't have feelings of regret overall. And I'm down almost 60 lbs. I do feel a little sad at restaurants. I can barely eat half a kid's meal. I get adults meals often because kid ones don't have the same offerings at times. Then I feel obligated to eat on that until it's gone and that can be days. So the restaurant thing isn't great for me. All the rest is fine by me! I love feeling full with very little. I do wish I could drink when eating. And will sip at the end. Just a strong habit to stop. But I'm working on it! You will do fine! Just keep focused on your desire to be different. Not better or worse. But different. I am happy both ways but my low back doesn't like me that heavy. So I listened (also my feet!). LOL! Update us on your journey! I'm not far from you. I'm in Houston. Good luck and I hope it all goes smoothly! Would love to see pics of the town you go to for this. I've never been there. Neat you will be traveling for this! Enjoy the journey. Take it one day at a time. Sometimes a few hours at a time. Follow all recommendations as best you can. 💗

        Thank you so much for your well wishes. I am hoping that everything goes easy for me as well. We don't eat out much as it is, so it wont be too bad in that department. Thankfully. Also, I hear you regarding your back and feet!! I'd like to add knees to the list. Killing me as we speak! I'm only 5' so the weight has to go. Too short to carry all this weight. Menopause really did a doosey on me. (😶lol) My daughter also lives in Houston. with her Husband and my 5 grand-littles. I grew up in Beaumont, so I know Houston well, I will be sure to keep in touch and update you on my journey. I may need some advice in the future, or just motivation. Thank You so much for reaching out, I was hoping to connect with someone in the community. I really appreciate it. 💜

      On day 4 of the 2 week liquid pre-op diet. Surgery scheduled for June 11th.
      Soooo I am coming to a realization
      of something and I'm not sure what to do about it. For years the only thing I've enjoyed is eating. We rarely do anything or go anywhere and if we do it always includes food. Family comes over? Big family dinner! Go camping? Food! Take a short ride or trip? Food! Holiday? Food! Go out of town for a Dr appointment? Food! When we go to a new town we don't look for any attractions, we look for restaurants we haven't been to. Heck, I look forward to getting off work because that means it's almost supper time. Now that I'm drinking these pre-op shakes for breakfast, lunch, and supper I have nothing to look forward to.  And once I have surgery on June 11th it'll be more of the same shakes. Even after pureed stage, soft food stage, and finally regular food stage, it's going to be a drastic change for the rest of my life. I'm giving up the one thing that really brings me joy. Eating. How do you cope with that? What do you do to fill that void? Wow. Now I'm sad.

        I hope your surgery on Wednesday goes well. You will be able to do all sorts of new things as you find your new normal after surgery. I don't know this from experience yet, but I am seeing a lot of positive things from people who have had it done. Best of luck!
