I stopped tracking calories in the Carb Manager app late September since that was when we started moving and yesterday was the first day I began tracking again. Thankfully I haven't gained but I'm still not where I would like to be. I'm hoping to get to my goal weight by the end of 2021. Fingers crossed!

Breakfast this morning: Scrambled tofu and veggie tacos topped with salsa on 1net carb tortillas.

Yesterday’s lunch: Turkey sandwich with fat free cheese on Aldi’s Keto bread and a pear.

dinner was the same salad 🥗

These are pretty good for homemade. I cannot detect a flavor or texture difference.

But since this flour is more expensive than I expected and now I'm nervous about alternative flours (after my coconut flour falls) I'm using it 1:1 with regular flour. I have not tried it alone yet.

If you decide to get it, please let me know what you think. I need backup.🤣

For lunch today I made some avocado toast on Keto bread and topped it with chunk light tuna. Just used fresh lemon juice and salt and pepper for the tuna. I was super hungry and made two but one did the job.

No I still have not bought one but I don't think this is one of those things that would work in an air fryer, its loose ingredients . can you make falafel or meat balls in an air fryer? If so maybe it would work...
Disclaimer: I pan fry foods, olive oil, grape seed oil, etc. I never intended to give that up, ever...

Sorry to butt in here, but I just wanted to say that I love my air fryer! Buy one! It is honestly life-changing. I just made some amazing garlic parmesan carrot chips in the air fryer tonight. I used the air fryer a lot more before my surgery because it's really good for frozen fries and anything breaded, which I don't eat anymore, but it's also awesome for cooking meat (you can air-fry fantastic chicken wings without any oil), roasting veggies, reheating stuff, etc. You can definitely air-fry meatballs, and I've never made falafel, but Google shows tons of air fryer falafel recipes, so I'd say that's also a yes. I almost never use my toaster oven anymore because the air fryer does almost everything better. I have this one:

But I bought it a couple of years ago, so there are probably better ones on the market now.

      Losing my hair in clumps and still dealing with "stomach" issues from gallbladder removal surgery. On the positive side I'm doing better about meeting protein and water goals and taking my vitamins, so yay? 🤷‍♀️

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!
