Thai Red Curry with chicken and Brown Rice

The curry sauce broke and curdled, so it looks awful, but at least still tastes good.

So much yummy food I missed. I hate that work interferes with lusting over everyone's food porn!

Another PSA: Dream Bagel Keto Everything Bagels (1 NET carb per bagel) are a solid thumbs down.

Came back from a bakery where I bought 6 Montreal style bagels straight off the conveyor belt along with a tub of gourmet garlic & herb cream cheese for the fam. They smelled so good while they were eating it, that I finally busted out the Keto bagels in the freezer that Mr. bought for me a while back.

I was all excited cuz these Keto bagels smelled really good too out of the toaster oven...slathered some of cream cheese, took one bite and...

Keto Bagel Fail.

These were not enjoyable at all. The density & texture was all wrong and other than the "everything" flavouring sprinkled on top it was very bland.

I ended up scraping the cream cheese off and just eating that, which btw was DELICIOUS (though for $8.50 for about 1 cup, it better be!!!)

Edited to add: so not to waste the Keto bagels, I'm going to toast em up, make breadcrumbs out of them and use them for breading or burger filler...Le Sigh. This is what happens when I stray from salads....lol

Thought I would try some chocolate mint Protein pots de creme. Didn't have any mint extract so I used sugar free caramel pecan Syrup. I cooked them too long as they still seemed to liquidy after cooking for 20 minutes. Tasted good but really sent my stomach churning. Might be because they were more brownie like than custard.

And they look good too! I wouldn’t think they would taste horrible. I miss bagels ...

When to a Chinese buffet with my family today. I ate the dumpling filling only and took a couple of bites of the rest from plate one. As for plate two and three. I I just had the salad and the oranges. Thankfully my brother and sister ate the rest of my food so there was no wasting. I need to stop serving food with my eyes.

After a few minutes I ended up going to the bathroom and throwing up everything 😔

I had/have so much stuff in my freezer I challenged myself to a no buy January, with the exception of fresh fruits/veggies and eggs. So far it's been 6 weeks, still going strong!

I do this all the time too. Every time we go out to eat, I'm all "Oooooh that sounds/looks good, I want this and that and some of this". Never fails. So there's always extra for my meal companions, and/or leftovers for multiple meals.

Losing my hair in clumps and still dealing with "stomach" issues from gallbladder removal surgery. On the positive side I'm doing better about meeting protein and water goals and taking my vitamins, so yay? 🤷‍♀️

I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.

I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!
