Almond Flour Cinnamon Rolls – Low Carb and Gluten-Free

Tender, moist, and perfectly cinnamon-y with a biscuit-like texture, these cinnamon rolls are a sweet Keto treat!

Servings 8 cinnamon rolls

Ingredients

Dough:

  • 2 cups almond flour
  • 3 tbsp granular Swerve Sweetener or other granulated erythritol
  • 3 tbsp unflavored whey Protein powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp xanthan gum
  • 2 large eggs lightly beaten
  • 1/4 cup butter melted

Filling:

  • 1 tbsp butter melted
  • 2 tbsp brown sugar substitute I used Ideal
  • 1 tsp cinnamon

Cream cheese Icing

  • 2 oz cream cheese softened
  • 1 tbsp powdered Swerve Sweetener or other powdered erythritol
  • 1 tbsp heavy cream
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 325F and grease an 8-inch round cake pan with butter.
  2. In a large bowl, whisk together almond flour, Swerve, whey protein, baking powder, baking soda, salt and xanthan gum.

  3. Stir in eggs and butter until dough comes together. It will be quite sticky.
  4. Turn out dough onto a large piece of parchment, and then pat into a rough rectangle.
  5. Top with another piece of parchment and roll out to about 10x8 inches. Peel off top piece of parchment paper.
  6. Brush dough with melted butter, then sprinkle with brown sugar substitute and cinnamon, going almost right to edges.
  7. Starting with the far, longer edge of your dough, gently lift away from the parchment and roll up tightly towards you. Pinch the seam to seal.
  8. Using a sharp knife, carefully cut into 8 equal portions. Place in prepared cake pan, just barely touching each other, and bake for 20 to 22 minutes, or until just golden brown. Remove and let cool 10 minutes.
  9. For the Frosting, beat all ingredients in a medium bowl and then pipe or spread onto warm rolls.

Recipe Notes

Serves 8. Each serving has 7.1g of carbs and 3g of Fiber. Total NET CARBS = 4.1 g

I always forget about frosting because I don't eat it , I will search for healthy alternatives and post once I find a few

My versions were vegan so a hard deviation from recipe listed, but I don't expect many other people here are vegan pathed so omnivore recipe posted.

I can easily make traditional baked goods but I want to step up my game and start trying more gluten free alternatives.




They taste nearly the same except the mostly gluten free version taste more like coconut flour one of the main ingredients. Very delightful.

This was my lunch but really was more like a late lunch snack because my Breakfast shake was later and so filling....

parm crips ( Whole Foods) dipped in mashed avocado. I bought a few convenience items that I can occasionally have if I don’t want to cook or want a huge meal. Plus my son and husband like the mashed avocado cups. These aren’t guacamole but similar and delicious.

No after - I had .75 ounces of crisp (about 4) and one container of avocado.

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
