@@Elode, avocados are my favorite food. I'm kind of sad about winter approaching since they will be close to impossible to find. ???? At least this is awesome chili-making weather.

@@KristenVSG2014 True, I eat some almost daily. My favorite is avacado and 1/2 pkg of starkist creations "Thai" style. Delicious!

Ok I have a new one I made last night. I bought ground turkey and made my own meatballs with it but put a small piece of mozzarella cheese inside. Put a little bit of Italian seasoning on the outside and cooked them on the stove top. They were amazing!! It was only about 240 calories to eat 2 of them and gave me 17 grams of Protein.< /p>

I can eat a hotdog in a bun. Someone posted earlier they can only eat a half hotdog (their surgery date was 2014). Is it unusual for me to be able to eat the whole thing??? My surgery was Sept. 2nd/15.

I'm a year out and can't finish a hot dog with a bun. I can eat a whole hot dog but no bread. If I eat the bun I can eat about half. No point in eating the bun so I skip it.

I made a casserole that someone posted, with cooked ground pork base, refried Beans, some chilis,onion and eggbeaters topped off with cheese. Bake for 30 minutes at 350 (9x11) pan. Delish!

Last night I threw together a "taco" casserole, and I'm having leftovers tonight. I just layered a can of refried Beans, a pound of taco-seasoned ground turkey, a cup of taco sauce, and a cup of shredded colby-jack cheese in an 8 x 8 pan. Then I baked it at 375 for 25 minutes. Yum! My husband ate his wrapped in a low-carb tortilla.

You inspired me. Mine is in the oven now. Using Seitan instead of Turkey.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
