Breakfast ~ 1 Cheesy Scrambled Egg, 3 Slices Turkey Bacon

lunch ~ 1/2 C Ground Beef mixed w/ 1/2 C No Fat Refried Beans, topped w/ 1/8 C Shredded cheese & 2 T Light Sour Cream

dinner ~ 5oz. Parmesan Meatballs mixed w/ 1/4 C Ricotta Cheese

962 Calories

27g Carbs (21 Net Carbs)

I notice you eat parmesian meatballs ...they sound delicious ...do you buy them or make them? If you make them would you mind sharing the recipe ....thanks for the help.

I make them :D

Parmesan Meatballs

1.5 lbs Ground Beef

3/4 C Shredded Parmesan cheese

2 eggs

1 tsp Dried Parsley

Dash of Pepper

2-3 T Butter

15oz Can of Tomato Sauce

1 Clove Garlic

1/2 tsp Onion powder

1/4 tsp Basil

1/8 tsp Oregano

Combine beef, cheese, eggs, parsley & pepper until well mixed then shape into meatballs. Melt butter in a large skillet and cook until all sides are browned. Place browned meatballs in the crock pot or a casserole dish suitable for the oven.

Combine the tomato sauce, garlic, onion powder, basil & oregano. Pour over the meatballs, stirring gently to coat.

Turn crock pot on low for 1-4 hours OR bake, uncovered in an oven at 350 for 30-40 minutes.

**I make them in the crock pot and although the recipe says 1-4 hours, I let them cook on low for 6-7 hours ... they turn out really tender and oh so yummy!**

S-dry roasted peanuts w/corn candy (much too much)

L-10 small popcorn chicken, 3 T spanish rice and 3 T coleslaw

D-1/2 baked pork chop, 3 bites of chicken thigh, 2 T spinach

2 bites of cornbread

Sorry, it took so long. I've been sick and haven't been online much. I just mixed together: 1 cup of skim milk, some Water (about 1/2 cup), leftover coffee (about 1/2 cup), some splenda, 1 packet of Diet Hot chocolate mix (only 25 calories), and a little Davinci SF Syrup (whatever flavor you like). I put in a big jug and just shake it until mixed well and poured it over ice. It was pretty good and only 125 calories. You could always add chocolate Protein powder instead of the hot chocolate mix if you wanted.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
