3 Weeks Post Op - Purée Phase OMG

Okay so just when I was ready to give up because I was tired of sugar free Popsicles, broth,Isopure, etc. I decided to make Cauliflower Mashed potatoes... OMG. If you love carbs you gotta try this.

Put 1/2 cup of broth (beef or chicken both are good) in a pot with your Cauliflower

Boil until the cauliflower is soft and falls apart

Put cauliflower in the blender with 1 low fat string cheese

Season to your liking

Add fat free milk about 1/4 cup

Blend together it will get nice and thick and it tastes just as good as mashed potatoes with none of the guilt.

I have made this before. Definitely agree that you should boil the cauliflower with broth (I use vegetable bouillon) to add more flavor! I also put a few cloves of garlic in with the cauliflower. It cooks along with it and then blends up with it for a garlic flavor. Instead of string cheese I use a half a cup of sour cream or a half a cup of buttermilk. Yum yum! I bet any kind of cheese would work. Like maybe some lite cream cheese even. :)

Now that I am on normal foods (4 months out) I have used this to make Shepherd's pie! It works really well!
