I had a great recipe for dried cranberry cheesecake squares...can't find it; bummer.

Is anyone baking Cookies this year,? I usually eat a bunch while baking, so I think I'll forgo this year...too much if a trigger. I'll just make cashew brittle.

I make cookies for neighbors and friends. I made a batch Thursday for my return to work yesterday. Still not hungry so I'm not tempted to eat them. This holiday is no stress for me because of that. It sure would be nice if that lasts forever! :-)

I'm still searching...will post.. The cashew brittle us really easy if you don't mind boiling sugar, using a thermometer, etc. I get the cashews at costco, so they're cheap. Do you want the brittle recipe?

Cashew brittle:

2 c sugar

1 c light corn Syrup

1/2 c Water

1 c butter

3 c cashews

1 t baking soda

Butter 2 cookie sheets

In a large saucepan combine sugar, Water, and syrup. Cook over medium heat until sugar dissolved. Bring to a boil, add butter

Stir often when syrup is about 230 degrees..

When at 280 degrees (soft crack stage), add cashews

Stir rapidly and constantly until hard crack stage, 300 degrees

Remove from heat and quickly stir in baking soda

Pour immediately onto cookie sheets and spread with wooden spoon. Remove from pans when cool and break into pieces. Store in airtight containers...

Pan can be quickly cleaned by running under very hot water.

Delish!

OMG that sounds heavenly. Bought a new bag of the cranberries and I know if I made this I'd make myself sick! I'm so weak!!! So far the cranberries are my snack fave now that blueberries are out of season. Haven't done any real baking for the season as we are in a tiny rental condo between locations but may give in soon as my son keeps asking why no Christmas Cookies. Mama will just have to be strong!!

Moving and baking? You're a superwoman...I decided to forget cookies this year...I spend a ridiculous amount of money baking, and no one in our family needs the calories..least of all me. I'll just do some candy and make dessert for Christmas. I'm already getting flak for not baking...that's usually Breakfast on Christmas morning. Maybe I'll do brunch instead. Egg bake and German pancake with buttermilk Syrup.< /p>

I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.

Losing my hair in clumps and still dealing with "stomach" issues from gallbladder removal surgery. On the positive side I'm doing better about meeting protein and water goals and taking my vitamins, so yay? 🤷‍♀️
