What ya eating tonight?

<p>Tonight the kids have asked for Breakfast, so I'm going to be making my version of huevos rancheros, grilled mushrooms, and I'm going to try a recipe for cream cheese pancakes.</p>

I found this recipe one day while having a craving for pancakes. By the time I found the recipe the feeling had passed so I have not tried the recipe but it sure does look good! Here's the link

Chickpeas are also called garbanzo Beans. Mostly in a can

I make an easy "garbanzo bean salad" my Armenian Step-Dad taught me. Just take two cans of garbanzo beans, drain and rinse. Mash them with a fork. Add some finely chopped onion. I prefer a sweet purple onion or sweet Vidalia. Add salt and pepper to taste and lots of fresh lemon juice. Garnish with a few cherry or grape tomatoes and some black olives. Add a little sprig of parsley for presentation if serving to guests. Serve cold. My mom likes to add a little olive oil to hers but I just like the lemon juice. And I like a lot if it. Oh so yummy!

Ingredients: 2lbs ground beef or ground turkey 1 cup white or brown rice (optional) 1 cabbage head 1/2 cup chopped onion 2 cans diced tomatoes 1 can Tomato sauce salt, pepper, season to taste Bring large pot of Water to boil. Core the center of the cabbage and place the entire head of cabbage in the pot of boiling water. Using two forks gently pull apart the cabbage leaves. Remove each leaf out of the pot as soon as it is separated. You don't want the leaves to cook in the boiling water. Mix together the hamburger or turkey, rice, onion, seasoning. Take each cabbage leaf, place the hamburger on the leaf, roll and place in a deep casserole dish. I use my deep.lasagne casserole. Layer the tomato sauce and diced tomatoes on top of the cabbage rolls. I also chop up the remaining leaves and put that on top. Sometimes I will add some green Beans on top too. Cover and bake at 350 degrees for 1 hour. Sprinkle a little Parmesan on it if you like. Sometimes I hollow out bell peppers, zucchini (large diameter) or tomatoes and stuff those too. Another option is to cook in the crockpot but you have to be careful not to over cook because it can become mushy. Hope you and yours enjoy it as much as my family does.

Mmm this sound good! I will make it sunday. Yum!

Where do you get chickpeas? Are they fresh or canned

I get a a prepackaged version of roasted chickpeas by Saffron Road. Love the seasoning they use. I do make my own from dried chickpeas sometimes, but so far I can't get the flavor of mine quite the same.

Went to Joe's Crab Shack an had 2 Lobster claws and 2 king crab legs... It seemed like I ate a plate full of food... But nope just that!! It was heaven!! My hubby ate the rest!

Oh my! A world of YUM! I was in Boston recently and got to have Legal Seafoods' appetizer crab cake. One was a enough for lunch and afternoon snack. I haven't been up there in so long that the day I flew out, I got another one for my flights to CA and one for the fridge and dinner the next night. I'm going to suggest Joe's for date night this weekend!

Okay, I'll look around. I have seen the granola in the grocery store, I just didn't think about adding it to yogurt!

I made my husband a whole wheat pizza with turkey pepperoni. So he was all set but what was I going to have? I took some leftover ricotta bake, added some pizza sauce and chopped turkey pepperoni and... Voila! I had a pretty tasty dinner and wasn't envying my hubby his pizza. :-)

Dorian, I have some good coupons for the granola but can't for the life of me remember where I bought it! Not Stop&Shop, not the local family-owned market, not Wallyworld... I checked all of those this weekend. Maybe Target? It's driving me nuts! And I'm almost out of it!

Try it mixed with Dannon Greek light & fit key lime... Amazing! :-)

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
