Cheesy spaghetti squash

Made this tonight. It was amazing. The only thing i did different was lightly oiled my baking sheet with pecan oil, lightly sprinkled the inside of the squash halves with herb d'provence. Place cut side down onto baking sheet. AND I add about 1/4 real bacon bits ( Hormel ).

Cheesy Spaghetti Squash Casserole Serves 4-6 Ingredients: 1 medium spaghetti squash 1 tablespoon butter 1/2 yellow onion, chopped 1 garlic clove, minced 1 cup low fat sour cream or greek yogurt 1/2 cup cheddar cheese 1 teaspoon sea salt, or to taste black pepper, to taste Directions: Preheat the oven to 400F and line a baking sheet with a Silpat or parchment paper. Cut the spaghetti squash in half, and remove the seeds. Place the squash halves cut-side-down on the baking sheet, and cook for 35-45 minutes, or until a fork can easily pierce the outer shell. Once you have removed the squash from the oven, melt the butter in a skillet over medium-high heat and saute the chopped onion and garlic until tender and slightly golden, about 5 minutes. Transfer the cooked onion and garlic to a large mixing bowl, and combine with the yogurt and 2 oz. of shredded goat cheddar, then season with salt and pepper. When the spaghetti squash is cool enough to handle, use a fork to scrape the noodle-like strands into the bowl, and mix well.

Mix all ingredients together in casserole dish and bake at 400 degrees.

I'm really sorry, but I don't have that info. All of the ingredients are allowed on my diet, and I ate two tablespoons.

I made this tonight. Oh. My. Goodness! This totally wiped out my Mac and cheese craving. It was delicious!!

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
