Then you might enjoy this delish recipe. Mix chicken cubes with coconut curry in a small skillet for a few minutes on high and, viola, instant chicken coconut curry for 1 or 2. It is very quick to make and is so savory, like eating in a fine Indian Bistro. Trader Joe carries a good coconut curry in a large container, good for 8-10 of these dishes. Enjoy!

I love coconut curry....just made it for lunch today! I mixed together a spoonful of curry paste, light coconut milk, chicken broth, and cilantro...then simmered the chicken in it for like 20 mins. Yummm.

I like using tofu and garbanzo Beans (chick peas)...you can add some cauliflower or some frozen carrots and peas. yummy!

Now if only the closest Trader Joe's wasn't 30 minutes away :D I used to be so addicted to their Cookie Butter :(

Does anyone have more quick and easy Indian dishes?

here is something I like that my mom makes...

* Marinate chicken cubes in some yogurt, curry powder (I actually use garam masala.. but curry powder is a good substitute), salt (and some lime juice if you like) for about 20 minutes.. (my mom marinates a batch and freezes it..)

* the marinade will have to cover the chicken fully..

* saute some chopped onions (1 part onions for 2 parts chicken) with a little oil (or a pam greased pan).. (you can also add some green peppers if you like them)

* once the onions are translucent.. add the chicken, and cover the pan over a medium/low flame.. with an ocational stir.. and chicken should be ccooked in about 15 minutes..

* I add some green peas once the chicken is almost cooked..

let me know if you like it.. i can note down more from my mom.. :)

edit... the marinade also needs some ginger and garlic paste..

Wow, this sounds amazing! I like the idea of freezing marinated chicken in batches too. Will have to try!

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
