Pistachio Cinnamon Chicken Salad

I saw this on the Skinny Taste blog and thought it was worth a try. It was really delicious - though I think the 1.5 cups of Greek yogurt was overkill for 16 ounces of chicken. I might try just a cup next time and that saves some carbs. Made as is in the recipe, MFP calculated the nutrition per serving (for 8 total servings ) at 116 calories, 7 carbs, 4 grams fat, 14 grams protein! ;)

16 oz cooked shredded boneless, skinless chicken breasts

1 1/2 cups Fat-Free Greek plain yogurt

½ cup pistachios, finely chopped

1 tsp ground cinnamon

1 tsp fresh lime juice

4 fresh basil leaves, finely chopped

1 stalk celery, finely chopped

1/4 tsp sea salt

1/4 tsp freshly ground pepper

2 scallions, finely chopped

Shred cooked chicken breast using a fork; place in a large mixing bowl.

Add remaining ingredients; gently toss to combine. Transfer to serving bowls. Serve chilled or at room temperature. Sprinkle with additional scallions.

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
