Hi Becky,

I am a vegetarian, mostly vegan and eat tofu and plant based Proteins. One good recipe is a tofu scramble.. its very easy. Make it with firm or extra firm tofu (drain the Water as much as possible) heat in cooking oil spray, ad some soft greens like baby spinach (if you are just on soft foods) or kale. The key spice is tumeric, for flavor and color. Then, for more Protein you can add nutritional yeast: http://en.wikipedia.org/wiki/Nutritional_yeast

You can top it with fresh salsa and it will be delicious and with lots of protein.

Another easy and quick way to eat tofu is just drain it really well and rub with very little pesto, just to give it the taste, then saute on both sides, serve again with light vegetables.

Hope this can help, I will try and send you some pictures of the meals I have prepared with tofu for other ideas.

Regards.

Literally just google tofu recipes. There are many recipes on the Web. Korean, Chinese, and Japanese cuisine features many tofu dishes that we in the West never think of. Tofu is great.
