Sausage, Egg, Cheese & Veggie 'muffins'

So I've been trying to come up with different things I can prepare in advance and have ready to take to work with me. I made this today and it came out really good, and its such an easy thing to grab and take with me.

Ingredients

6 eggs

1/2 cup skim milk (I used Skim Plus for some extra protein)

3 small turkey sausage patties (I used Banquet fully cooked turkey sausage patties)

3 TB green pepper

3 TB onion

1/4 cup reduced fat shredded cheddar

1 TB extra virgin olive oil

Salt and pepper to taste

  • Preheat oven to 350 degrees
  • Dice pepper and onion, Saute in olive oil over medium heat until soft
  • While those are sautéing, mix eggs and milk in bowl (season mixture with salt and pepper to your liking)
  • Pour mixture into muffin pan (I used a jumbo muffin pan that made 6 muffins and filled each about half way with the egg mixture). Also, make sure you spray with non-stick spray if not using a non-stick pan
  • Distribute veggies, sausage, and cheese evenly in each muffin
  • Place in oven and cook for approximately 15 minutes

Nutritional info:

Per Serving: 143 calories 2g carbs 10g fat 12g Protein

If you substitute the eggs with Egg Beaters instead (1/4 cup serving per muffin), you can reduce the calories and fat.

The nutritional info would then be: Per Serving: 84 calories 1g carb 5g fat 10g Protein

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?
