Buffalo Chicken Bites + Chicken Enchilada Bites

Hey there - just a few weeks post-op and today was inspired by Emily Bites Buffalo chicken Cupcakes (but not ready for wonton wrappers) and Eggface's famous bites (but, alas, no buffalo chicken recipe). I was craving buffalo chicken, and mexican food, so decided to make my own in two "flavors"; buffalo chicken and chicken enchilada to use up a can of chicken I'd bought at Trade Joe's. They were sooooo yummy! Posted recipe and pics on my blog if anyone's interested.

I've made that hungry girl buffalo chicken recipe. It's good (but I'm a weenie, I don't do spicy... so careful on the frank's red hot cayenne pepper sauce, which can be found at walgreen's of all places). I love "bites" but they encourage me to eat more than I think I would otherwise, so I hafta watch it. Thanks for sharing your recipes!

I made the Buffalo Chicken Bites. Me and my husband loved them. The refrigerated leftovers heat up really good and they taste just as good or better than the first time they came of the oven. I want to make some of Emily Bites recipes soon too. I copied several of the cupcake recipes and can't wait to try them. Will post when I do.
