have you seen those 3 x 3 frozen cold packs that you can put in your lunchbox? I keep them in my freezer. Anyway, maybe some chicken salad with low fat mayo or tuna salad with low fat mayo and low fat crackers, string cheese for snack. Just a thought.

I bought a Thermos and make low fat chili or Soup. it's still very warm, sometimes hot at lunchtime. The thermos I got is from Target in the camping section, they had a good variety of different sizes, I bought the smaller one for Portion Control.< /p>

porridge pots are great, just add boiling water! keeps you full for a good while and low fat. If you are really hungry you can add half a chopped banana to it, yummy :P x

For breakfast I premake oatmeal at the beginning of the week, and separate out portions. I eat that with half a banana. I also might have raisin bran Cereal. I don't do dairy though; I use almond milk. I honestly really like eggs for breakfast. I don't eat bread because for me it sticks really bad, so no toast, but I cook 2 eggs and put a little salsa on them, or avocado. Avocado is great because it has good fats in it.

For lunch I like to have sliced turkey, and a vegetable of some kind; cucumbers, etc. or salad. I know that might not be easy to take with you on a construction site, as the veggies might wilt; but try to bring a cooler with an ice pack. I like to make potato Soup too; you can put that in a thermos. I don't personally do dairy, but you can add low fat cheese to all those suggestions. I used to like cottage cheese as well. (The reason I don't do dairy is because I'm breastfeeding, and my daughter is intolerant, I'm not against dairy or anything, ha ha).

I'm a big fan of cooking things ahead of time, and freezing portions, or storing portions. One of my favorite lunches is brown rice, chicken (chopped fine), salad mix and salsa. It's like a burrito bowl without the tortilla or Beans. (I don't eat Beans because they give me really bad bad gas that gets trapped in my pouch... ow!)

Hope that helps!

Those cheeses are a favorite hiking snack! They.hold up in 90deg summer weather ( the wax gets a little soft...) and a recent snowshoe outing. Yum. And there.are "light" ones too.

On day 4 of the 2 week liquid pre-op diet. Surgery scheduled for June 11th.
Soooo I am coming to a realization
of something and I'm not sure what to do about it. For years the only thing I've enjoyed is eating. We rarely do anything or go anywhere and if we do it always includes food. Family comes over? Big family dinner! Go camping? Food! Take a short ride or trip? Food! Holiday? Food! Go out of town for a Dr appointment? Food! When we go to a new town we don't look for any attractions, we look for restaurants we haven't been to. Heck, I look forward to getting off work because that means it's almost supper time. Now that I'm drinking these pre-op shakes for breakfast, lunch, and supper I have nothing to look forward to.  And once I have surgery on June 11th it'll be more of the same shakes. Even after pureed stage, soft food stage, and finally regular food stage, it's going to be a drastic change for the rest of my life. I'm giving up the one thing that really brings me joy. Eating. How do you cope with that? What do you do to fill that void? Wow. Now I'm sad.

Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!
