Mashed Cauliflower?

I've been reading about this and it actually sounds like a nice healthy substitute for mashed potatoes. Anyone tried this? Do u need a machine that whips it? Or how do you prepare them? I love cauliflower in all forms just never tried them this way!

I've had it in kitchen aid...whipped up like mash potatoes:) yummy

We're having it for dinner tonight! Cook with leeks, add a little cream (substitute half and half). I use a Braun hand mixer. Through a little nutmeg. Yummy!

1 Medium head caulifl ower, cut into florets

2.5oz Light cream cheese (An alternative option is using low fat smooth ricotta cheese)

1 Clove garlic, crushed

Salt and pepper to taste

Chives, chopped

Steam cauliflower until tender.

Place in a blender or food processor with the cream

cheese, garlic and salt and pepper.

Process until smooth.

Garnish with chopped chives and cracked pepper.

If the mixture is too thick, try adding a small amount of salt reduced stock while blending.

This is a recipe I used to use on another weightloss program many years ago.

I don't know if you are "on" Pinterest but I found a recipe for Twice Baked Cauliflower and it was amazing. It was very light and oh so flavorful. PInterest has many cauliflower recipes that I want to try since bread has become a definate no-go for me. These recipes include cauliflower Pizza Crust, bread sticks, roasted cauliflower, etc...

I was just wondering about that! I bought some yesterday but was worried about the gas.

I usually roast it on broil in the oil then add olive oil and salt. So yummy? But I'm going to try the mashed potato version. Sounds great!

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
