Chicken Salad Recipies

Chicken salad has become a huge staple of my diet since bread went out the window. I usually replace my mayo with half mayo half plain greek yogurt and sometimes cottage cheese just to cut the fat of full mayo. How do you make your chicken salad??

2 small cans of chicken or 1 large can, I use fresh chicken sometimes, light mayo, paprika, 2 chopped eggs, small jar of pimentos, salt and pepper to taste, and a little bit of sweet pickle relish if I feel like it. I use whole wheat ritzs.

The chicken, light mayo, celery salt, garlic & herb seasoning, and a bit of lemon juice.< /p>

I make my tuna and chicken salad the same way:

Can or pouch of chicken or tuna

Hard boiled eggs

Dab of mustard

1 wedge laughing cow light cheese (in place of mayo)

Salt and pepper or other seasonings

Sometimes I add dill pickle relish or chopped apples

i do 2 different things, one is a friends recipe, Buffalo chicken salad, 1 can 4oz, i use light may, she used greek yogurt, and then some Franks red hout sauce mmm mmm mmm

i also make 1 can, light may, i egg, red onion and cumin seasoning, its reallay good, some times add bacon also.

or i cook tandori chicken then make chicken salad with the leftovers overs with mandrian oranges in it

I'm personally not a big chicken salad eater ( harder to eat than tuna) but I have the same recipe for both chicken and tuna salad and they are delicious.

Can of Tuna drained well. If you have a cat give them the Tuna Water ( in moderation) they love it!

1 largish Jalapeno pepper diced small remove seeds please

Red Pepper half a medium diced small

Red Onion (to taste) and again diced small I use about 4 Tablespoons or more

Chunky salsa 1 or two tablespoons

Olive Oil mayo 1 or 2 tablespoons

Lime juice just a little for flavor

Sea salt and fresh ground black pepper.

Chopped Cilantro

Mix all the ingredients except Cilantro and taste. Add more of what you think it needs then mix again.

Add chopped Cilantro right before serving and Viola! Mexican Tuna/Chicken salad. I used to eat this with Whole Wheat Pita when I still could but crackers or tortilla chips are delicious as well.

Please tell me that you are you eating this as a mushie? Chix salad is the first thing I'm going to eat (when I can eat). Can't wait !

They do sell a fat free mayo that is delicious. It's made by Kraft and is yummy!

I'll have to try that Kraft fat free mayo. Wasn't crazy about Best Foods low fat mayo

I make a simple curry chicken salad. I use boneless breasts that I roast and then shred. I add light mayo, curry powder to taste- a little goes a long way, but then again I like a lot of curry ;) - then slice grapes and salt and pepper. Sounds weird but I think it is delicious!

Oh, I never thought of curry. That's so good with chicken and will cover up for the nonfat mayo I hate. I thought we couldn't eat grapes because of the skin. You don't have a problem with them? I love grapes.

      On day 4 of the 2 week liquid pre-op diet. Surgery scheduled for June 11th.
      Soooo I am coming to a realization
      of something and I'm not sure what to do about it. For years the only thing I've enjoyed is eating. We rarely do anything or go anywhere and if we do it always includes food. Family comes over? Big family dinner! Go camping? Food! Take a short ride or trip? Food! Holiday? Food! Go out of town for a Dr appointment? Food! When we go to a new town we don't look for any attractions, we look for restaurants we haven't been to. Heck, I look forward to getting off work because that means it's almost supper time. Now that I'm drinking these pre-op shakes for breakfast, lunch, and supper I have nothing to look forward to.  And once I have surgery on June 11th it'll be more of the same shakes. Even after pureed stage, soft food stage, and finally regular food stage, it's going to be a drastic change for the rest of my life. I'm giving up the one thing that really brings me joy. Eating. How do you cope with that? What do you do to fill that void? Wow. Now I'm sad.

      Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!
