Chili and Soups...Sliders???

As I love your taco Soup recipe so much... would you share the black bean and pumpkin Soup recipe! Sounds wonderful!!!!

Thanks. This isn't quite as good as the taco soup, but we like it pretty well.

Some tips:

Make sure you have the solid pack pumpkin, not the stuff ready to pour into a pie crust.

I use less olive oil than the recipe calls for.. maybe teaspoon? Not sure how much as I either measure a capful from my bottle (which is way less than a tablespoon) or I use Olive Oil spray.

recipe says to cook it for 4-5 hours in a slow cooker.. we can never wait that long. I just put it all together in a big dutch oven and heat it and eat. :thumbup:

Another change is that I don't worry about having chicken broth.. either I have it and use it, or I don't and add chicken bouillon & Water.

Last time I made it, I used chopped chicken from a store bought rotisserie chicken. Just play around and see what works for you and your family.

Black Bean 'n' Pumpkin Chili Recipe | Taste of Home recipes

  • Prep: 20 min. Cook: 4 hours

Ingredients

  • 1 medium onion, chopped
  • 1 medium sweet yellow pepper, chopped
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 3 cups Progresso ® Chicken Broth
  • 2 cans (15 ounces each) black Beans, rinsed and drained
  • 2-1/2 cups cubed cooked turkey
  • 1 can (15 ounces) solid-pack pumpkin
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 2 teaspoons dried parsley flakes
  • 2 teaspoons chili powder
  • 1-1/2 teaspoons dried oregano
  • 1-1/2 teaspoons ground cumin
  • 1/2 teaspoon salt

Directions

  • In a large skillet, saute the onion, yellow pepper in oil until tender. Add garlic; cook 1 minute longer. Transfer to a 5-qt. slow cooker; stir in the remaining ingredients. Cover and cook on low for 4-5 hours or until heated through. Yield: 10 servings (2-1/2 quarts).

Nutrition Facts: 1 cup equals 192 calories, 5 g fat (1 g saturated fat), 28 mg cholesterol, 658 mg sodium, 21 g carbohydrate, 7 g Fiber, 16 g Protein. Diabetic Exchanges: 2 very lean meat, 1-1/2 starch, 1/2 fat.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

        I may have to have gall bladder surgery during my weight loss surgery. Not thrilled about it either but do not want 2 recovery times. Just want it over with.

        Thanks for your post. I may need to rethink my decision... :(
