  3. Thats sounds good! I wish I had people who sold tamales and churros near me. I will say though that Im lucky to have a woman who makes bolivian soup from her house and OMG its honestly some of the best soups Ive ever had in my life.
  4. Day 26: I'm most grateful for my shredded chicken tostada. I made enough chicken to last until tomorrow (ate this yesterday too). I just didnt want to think about what Im eating until thanksgiving. So ....... may these tostadas give me the fuel I need to cook and get ready for the big day... the lord knows im going to need it ???

  6. Yea a lot of countries make them for Thanksgiving, Christmas, or New years. Its one of the foods I look forward to during the holidays :) Its definitely a labor of love! Although I have no energy after makings tons, I get to catch up with my family and eat good after so I try to look on the bright side lol. But Im not going to lie, the thought of buying sounds better to me. I'm just too scared to bring it up. I can already see the dirty looks! lol Almost every Latin American country has their own tamale and within the country each region uses different ingredients. They also vary by shape and color. Mexican ones are good but some of my favorites are from South America. I have yet to try each one, there are just too many. In Peru there's like 10 different kinds and I've only tried two.

  8. I can relate to this! There's no such thing as cooking small in my family. There are a lot of us and everyone eats a lot. Oh, and that omelette looked delicious!

  10. It’s was 2 months post op I believe. I still didn’t recover (my beginning journey was rough) but I ended up having a small piece of chicken and then instantly felt like crap after. It all depends on the person. Stick with soft foods
  11. Stay focused! Try not to put yourself into situations where you are tempted by food or bad eating. I had to do a strict two week liquid diet before surgery and it was tough but doable. You got this.

  15. Green and black teas are good like you've mentioned but I also know Chamomile, and ginger lemon are good too. There's not as much caffeine in those either. I love tea ❤️

  17. Quick dinner tonight: basic salad (forgot to buy spring mix ), sautéed asparagus, and fresh cod. Posted my bfs plate for comparison. Every time I serve him Im reminded of how much I use to eat. It would be his portion size plus a second piece of fish and more rice. Sometimes I catch myself serving more than what I can eat but then I remind myself I won't even be able to eat that much so I put it back. Bf's plate: My plate: After:
  18. Day 22: Im most grateful for thanksgiving last year. My parents and I ended up hosting plus I went to my bf's dads house, his moms house, and a family friends house. I had such a good time with everyone! Plus all the food was great. I had something different at each house. When I finally got back home, which was around 3 am, my family was still drinking and partying. My aunt who is almost 5 ft tall and maybe weighs about 120 pounds ended up drinking a little too much and stood on our coffee table and started dancing. Everyone was cheering her on but then out of the nowhere the coffee table broke and she fell. She ended up getting right back up and continued dancing like crazy and everyone cheered even louder ? Day 23: Im most grateful for FaceTime! Do you know how many times my bf runs to the grocery store to pick something up while I'm cooking but gets the wrong thing? If it wasn't for FaceTime, this issue would continue to happen. I need to plan my grocery trips better. B-Side Question: Are you good or terrible (like John Mayer) at moderation? I use to be terrible... ABSOLUTELY TERRIBLE. Moderation, especially when it came to portion sizes didn't exist. Thats how I gained so much. Im happy to say its gotten so much better. I actually know what moderation means now lol
  19. Busy Sunday so I bought lunch in between errands. Shredded chicken tostada. I remembered to take a pic in the middle of a couple bites so excuse my before pic lol

Ingredients: 1 lb beef 1 - 2 bunches of green onions 1.5 tbsp shaoxing wine 1.5 tbsp soy sauce 1 tbsp oyster sauce 1 tbsp white pepper 1 tbsp chicken powder 2 tbsp cornstarch 1.5 tbsp sesame oil 1 tbsp minced garlic 1/3 cup water 1/3 cup soy sauce or oyster sauce 1/3 cup brown sugar 1/3 cup shaoxing wine slurry (1 tbsp cornstarch to 2 tbsp water) 1. Thinly slice your beef against the grain. It doesn't have to be flank steak. You can use any type of meat and cut. 2. Soak the beef in water for 10-15 minutes. This cleans/pulls the blood out of the beef and also tenderizes it. 3. Mince 2 cloves garlic. 4. Marinade your beef with shaoxing wine, soy sauce, white pepper, chicken powder, cornstarch and sesame oil. Mix. 5. Flash fry or pan fry your beef with very little oil. Your thin strips will cook quickly so keep an eye out. Set aside. 6. Add oil to a hot wok/pan. 7. Add minced garlic. 8. Add water. This will serve as the base of the sauce. 9. Add soy sauce, oyster sauce, brown sugar, shaoxing wine, and white pepper. Mix upon adding each seasoning. 10. Add slurry to thicken the sauce. The amount you add is dependent on how thick you'd like the sauce. The ratio to make a slurry is 1 tbsp cornstarch to 2 tbsp water. 11. Let the sauce reduce to your liking. 12. Add the cooked beef or meat of choice. Mix/toss everything. 13. Add the green onion. Mix/toss everything. Don't overcook them if you want them crunchy! Hope you like it! Also, you may have to tweak the wine, sugar and seasonings depending on your liking
  22. Grilled chicken salad for lunch today. When I stick to eating just the veggies I feel like I can finish the whole thing but once I take a bite or two of chicken that's when I feel full and need to tap out.
  23. I can relate to this. There was a point where I didn't like myself for being so fat and I sacrificed most of my social life because of how self conscious I was. Being so young at a heavy weight didnt help either.
