Anyone have suggestions????

Hi everyone.. Heres the thing. I am on my 4 week pre op diet.. I have no issues with lunch or Breakfast, but when it comes to dinner I have a hard time deciding what to do.. Some nights are very easy, but does anyone have any suggestions that are VERY VERY easy for those nights when one just does not feel like cooking??

Please provided suggestions.. I wanna stick to to my diet, but apparently I still need to adjust. The nutritionist said it will get easier going into week two and three so I am looking forward to those weeks.. I don't mind eating healthy infact I LOVE IT.. I just get tired of cooking EVERY night..

Any suggestions will be appreciated..

This one is easy for me for dinner...just throw a whole chicken in the crock pot and pour a jar of chicken gravy (healthy of course) and cook it all day. Very easy and my family loves it as well. Then just heat up some veggies and your good to go. I suggest putting everything in the crock! Now that the kids are back in school and I do work part time it is a lifesaver!!

On the nights that I just absolutely don't want to cook, I warn the family ahead of time that they are on there own for dinner because I'm not feeling well or because I'm tired. When I do this though, I make sure there is something easy for them to make in the freezer or pantry. My daughter is 14 and she pretty good at throwing Frito boats together! lol. Then I'll just make myself a small bowl of Cereal or throw a south beach meal in microwave, I may add a salad too. I probably do this about once a week.

I cook about 2-3 meals a week in a crock pot when I know I won't have time later in they day. One good recipe is chicken chili:

4 chicken breasts

1 jar of salsa

1 cup of chicken broth

1 cup of chili Beans

chili powder to taste

cook in slow cooker/crock pot for 4-6 hours on high, or 10-12 on low.

Also, I cook a lot of food so that I can have leftovers and don't have to cook everyday.

      On day 4 of the 2 week liquid pre-op diet. Surgery scheduled for June 11th.
      Soooo I am coming to a realization
      of something and I'm not sure what to do about it. For years the only thing I've enjoyed is eating. We rarely do anything or go anywhere and if we do it always includes food. Family comes over? Big family dinner! Go camping? Food! Take a short ride or trip? Food! Holiday? Food! Go out of town for a Dr appointment? Food! When we go to a new town we don't look for any attractions, we look for restaurants we haven't been to. Heck, I look forward to getting off work because that means it's almost supper time. Now that I'm drinking these pre-op shakes for breakfast, lunch, and supper I have nothing to look forward to.  And once I have surgery on June 11th it'll be more of the same shakes. Even after pureed stage, soft food stage, and finally regular food stage, it's going to be a drastic change for the rest of my life. I'm giving up the one thing that really brings me joy. Eating. How do you cope with that? What do you do to fill that void? Wow. Now I'm sad.

      Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!
