I just received a frozen popsicle maker, so I am about to embark on a popsicle adventure! Summer will, no doubt, present it's fair share of challenges in the food department, so I though if people would submit ideas for chilled/frozen/cool food recipes, that would help us all stay on the right track! I am going to try and come up with a frozen Gazpacho popsicle...now doesn't that sound awesome? I am so tired of the same old - same old, and this is my first summer after WLS, so I want to see what people can come up with that will 1. Keep us fed! 2. Keep us from getting bored! 3. Keep us on track! So please, if you have ideas/recipes, please share!!! Thanks to all who participate, this should be fun!

I'm going to splurge on a new popsicle mold this summer. I make my own. I find that the summer fruits when in season can be pureed and set in a mold as is since they tend to be sweet enough on their own. Occasionally I may blend some greek yogurt for cream-sicles or switch it up and add whole berries to a puree to set. Like pureed kiwi with pitted and halved cherries. It looks pretty and taste great!

The best little gadget I've invested in is the dessert Bullet. It's the coolest thing ever! You just put fresh frozen fruit in it and it comes out ice cream consistency. You don't have to add anything else to it if you Don't want to. My daughter likes to freeze yogurt cubes in the ice tray and adds it to the fruit (and of course chocolate chips ect..) I don't add anything And it's perfect!!! Highly recommended:)

I have a terrible sweet tooth. O just had to find healthy sweet treats for me. I like my pineapple and coconut sorbet. I use frozen pineapples and add it to greek yogurt with some unsweetened coconut flakes,raw honey and sometimes vanilla. I put it in my Nutribullet and place in the freezer for a few. It's very good. I also freeze bananas and add some liquid and blend.That is my banana ice cream.

      On day 4 of the 2 week liquid pre-op diet. Surgery scheduled for June 11th.
      Soooo I am coming to a realization
      of something and I'm not sure what to do about it. For years the only thing I've enjoyed is eating. We rarely do anything or go anywhere and if we do it always includes food. Family comes over? Big family dinner! Go camping? Food! Take a short ride or trip? Food! Holiday? Food! Go out of town for a Dr appointment? Food! When we go to a new town we don't look for any attractions, we look for restaurants we haven't been to. Heck, I look forward to getting off work because that means it's almost supper time. Now that I'm drinking these pre-op shakes for breakfast, lunch, and supper I have nothing to look forward to.  And once I have surgery on June 11th it'll be more of the same shakes. Even after pureed stage, soft food stage, and finally regular food stage, it's going to be a drastic change for the rest of my life. I'm giving up the one thing that really brings me joy. Eating. How do you cope with that? What do you do to fill that void? Wow. Now I'm sad.

      Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!
