I also make the "casserole" but I've always considered it a "Crustless Quiche". So many ways to go with this dish. If I'm going for a Southwest flavor, I add black Beans, corn, red peppers, jalapenos, onions. Or, if I feel like healthy choices, I'll add spinach, turkey sausage(or not) red bell peppers, mushrooms etc.

Interesting way to cook eggs. I may try that. Here in Denver, boiling temp is closer to 180 so not sure if it works the same? And the tip to crack the egg? Gotta try that.

That is the way we do eggs at our house. The abrupt change from hot to cold actualy shocks that filmy membrane under the shell so that it releases from the whites, and you can peel it easy and pretty. Now, what if you got busy and forgot to come back to your eggs? Just put them back into the some hot Water for a couple of minutes, and the same thing happens by reverse process, and the shells will release.

I like making egg frittatas. You can put anything in them you want, put in a muffin pan and bake until slightly firm. Makes a great snack.< /p>
