Pumpkin spice steel cut oats

I am really excited about the Breakfast I had this morning.

I made pumpkin spice steel cut oatmeal in the crockpot overnight. I had it this morning with a couple of ounces of vanilla Greek yogurt and a half tbsp of pecans. It's a keeper.

The whole meal came to 141 calories,

17.3 carbs (a little high, but really not bad for oatmeal.)

9 g Protein

Much better stats and taste than the instant.

That sounds really good!

I just had plain steel cuts oats, which I love; pumpkin added would be good for sure!

Oh my goodness that sounds good - may I steal this idea for the show? I'll give full credit to you for it. I love oats and we don't eat near enough of them!

No need to credit me. I actually got the recipe from here:

I did make some adaptations, though. I used a full cup of pumpkin purée (I really wanted to taste the pumpkin) and omitted the maple Syrup and added 1/4 cup of granular Splenda (use whatever you like to sweeten). I also used two teaspoons of vanilla extract. It still was not very sweet, so if you like it sweet you'll need to add more sweetener to your bowl when it's done. I cooked it in.a crockpot (with a slow cooker liner) overnight. Super easy clean up. I took it out, put a new liner in and made a roast right after. I ate it with half a container of vanilla Greek yogurt ( to bump up the protein) and a sprinkle of chopped pecans. It made 12 - 2.75 oz servings (the perfect size since I had it with yogurt) or 8 - 4oz servings.

the stats for the oatmeal alone ( 2.75 oz serving) with my tweaks to the recipe are:

Calories: 69

Fat; 1.1

Carbs 12.1

Fiber: 1.8

Sugars: 2

Protein : 2.5

Lastly, this morning, I portioned out the remainder of the oatmeal and rolled it in balls and stuck them in some freezer bags. When I'm ready, I'll pull out a ball and nuke it with a splash of milk or Water. Voila, instant oatmeal.

Jen, let me know how you like it and if you made some of your own tweaks. By the way, I have watched some of your episodes in the past. I'll keep an eye out for this one.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.
