Turkey Meatballs - Super Moist!

Just made a concoction I LOVE! For those of you that plug in all the ingredients to get calories, Protein, etc...Please do and let me know! :)

I had some ingredients in the fridge to use, threw it together, and yummo! I hope y'all try it, I really liked it!

I know it makes quite a bit, but you can make smaller batches...I am bad at following exact recipes anyway, so here is what I had and did :)

2 pounds 99% lean white ground turkey (Jenny-o)

1 package frozen chopped spinach thawed and drained, squeezed out.

1 can artichoke hearts quartered

2 eggs

1 cup fresh sliced parmesan - crumbled in

8 spicy crackers

Seasoned to taste (I like a little garlic and cayenne)

Mixed, formed 3 oz balls, baked on foil at 350' for 35 minutes (could be less if smaller meatballs)

Delicious!!! :)

This recipe yields 20, 3 ounce meatballs. 11 grams of Protein, 6 grams of fat , 3 grams of carb and 108 calories per 3 ounce meatball.

I didn't know what Spicy crackers were, so I just used the nutritional value of 8 Ritz crackers.

Thanks for the breakdown! I am surprised at the amount of carbs.....10 ritz crackers is 20g of carbs....for the whole batch! At 20 meatballs, that's 60g of carbs?! Maybe the spinach and artichoke hearts have some.....I should check :) Sure are yummy.

The whole recipe has 53 grams of carbs- less than 60 due to actual carb being rounded up in the individual meatball....25 carbs in the package from spinach 10 from the artichokes... 25 of the grams are from Fiber.< /p>

Instead of using crackers, you can use mushrooms and other veggies. I just posted a recipe for Asian Inspired Turkey Meatballs on my food blog---the sauce is not VSG friendly, that was for hubby.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.
