I REALLY like the boneless chicken w a can of soup in the crockpot. It gets super soft.

Google crockpot cream cheese chicken:

Chicken pieces or breasts in crockpot

Top with Italian dressing dry seasoning packet

Melt low fat cream cheese in a pot with low fat cream of chicken soup.

Pour over chicken and Italian seasoning mix

4-6 hours on low.

Try bariatric foodie, emilybites or the world according to egg face. I can't eat much yet, but they have great ideas!

Ohhh....Dez!! That sounds YUMMY. never thought to add cream cheese.

I have seen several posts of people taking the lasagna or taco cupcakes to pot lucks. They are super easy, single serve, and taste great!

I put boneless chicken breasts and thighs in the crockpot covered with a jar of mild salsa and either a can or 2 of corn (liquid too) or I cut corn off of a couple of cobs. I cook it all day then shred it before serving. It is very tasty and very moist. My whole family loves it.
