Super Easy - Crustless low-carb quiche

I made this recipe tonight for crustless, low carb quiche. I used mushrooms and onions instead of ham and broccoli and it was GREAT:

Ingredients

  • 1 cup (not packed), non fat cottage cheese
    2 cups egg substitute, liquid (Egg Beaters, or whites)
    1/2 cup broccoli, cooked, chopped (or whatever you like)
    1/2 cup ham, extra lean, (5% fat), diced (or whatever you like)
    1/2 cup Cheddar or Colby cheese, Low Fat, shredded
    Salt & Pepper, to taste
    Cooking Spray

Directions

Preheat oven to 375.

Mix all ingredients in a large mixing bowl. Pour into a pie dish sprayed with Pam or other cooking spray. Place on cookie sheet in oven. Bake approximately 45 minutes or until center is just set.

Makes 6 servings.

Variations:

Substitute different meats, cheese, and veggies such as:

turkey bacon, sausage

reduced fat swiss, mozzarella, or feta

spinach, peppers, onions, asparagus

This recipe makes 6 traditional servings. 126.4 calories, 19g of Protein, 2.2g of carbohydrates per serving.

Someone posted a Philly Cheesesteak version of this a long time ago. Same egg base, but use roast beef (chopped), onions, peppers and velveta. It sounded so good but I forgot all about it till you posted this! I will have to print this out :)

Jackie, this sounds really good! Do you know if it comes out okay without the cottage cheese? Would it be too dry? I'm lactose intolerant now. I can tolerate some of the harder cheeses but not ricotta or cottage at all. This recipe sounds really good. I would eat it for Breakfast too! :-)

mnbsleeve - I read a few of the comments and it does seem that people left the cottage cheese out when they made their own versions of this recipe. I would say to go ahead and experiment. Since it's basically just eggs and filling, the worst case scenario is that you make a frittata. :)

Mnbsleeve, do you have lactaid cottage cheese in your area? I am lactose intolerant and its ZERO lactose! And its real cottage cheese with the medication already in it. Its a real lifesavor for we the intolerant of lactose.

be warned, the texture is more frittata than quiche, but it's pretty yummy. :)

I totally have to stay away from the recipe forum for awhile. Doing only liquids and reading this totally made me drool. I can't wait until I am able to eat something like this.

Thanks for sharing..I made this a couple of days ago and I love it!!! I used 6 eggs instead of the beaters and used bacon instead of ham and added a ton of veggies (steamed broccoli, mushrooms, peppers, onions) and I can't get enough of it...I've already had 6 meals from it and still have half left!! Thanks again!!

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
