Eggplant Pizza

Hey yall. This is something my mom used to make for me when I was little. I thought maybe it would be good to eat when you start your mushies, since it's basically roasted veggies.

Cut the eggplant into discs and sprinkle them with some olive oil, salt and pepper. Roast in the oven until soft (I don't really know how long your supposed to roast it for; I do it at 425 for about 25-30 minutes. it depends on how much crunch you like to your veggie). Once they are roasted, pull them out and top with some marinara (I just use jarred spaghetti sauce) sprinkle with some low fat cheese and put it back in the oven until the cheese melts.

Viola!

yum! I love eggplant!!!

Does red Tomato sauce/marinara bother you? I know you've been struggling with acid reflux, and now I am as well. Tomato sauce is a big no-no for acid reflux people. Do you find that since going on the meds, you are okay even with red sauce? I would love to be able to include red sauce in meals right now... desperate for anything!! lol... and I love eggplant!

Jordien: That's a good question. I didn't even know that about Tomato sauce. I haven't tried any marinara or tomato sauce since surgery so I'm not sure how it will work out. Hopefully the meds will help because I LOOOOOOVE marinara. I'll let you know how it goes.

Sidenote: I was just talking to my mom about this recipe and she suggested peeling the eggplant.

I personally don't mind the skin, but if you're not a fan then you'll probably want to do that.

This also works well as a casserole of sorts. Instead of making the individual pizzas, layer the eggplant in a dish, cover with sauce and cheese, repeat until dish is full, and then bake it.

Like an eggplant parm, only not breading/frying up the eggplant! Yum... I am going to experiment with this, but not until after tomorrow when I most likely/hopefully get my acid reflux prescription!! Ugh!

Fleur, how are you doing in general since you started the meds for acid reflux? Like a totally new person? Did it help with that weird nausea? I am 99% sure the weird nausea feeling I have is from the acid reflux and heartburn I am having. I HOPE so much that it will stop after I get on a PPI.

I think most of the nausea I was having was form the reflux, too. I still feel a little queasy sometimes but the reflux is no longer ruining my life. My reflux stopped pretty much the morning after my first dose and I haven't felt it since.

I hope things go well with getting your prescription tomorrow. It make such a big difference!

I'm so glad for you!! I had the same experience. I got my prescription filled Wed. night, and I've been like a new person since taking it. I'm able to try new foods and have a normal "I'm full because I have my sleeve" feeling without having the I'm nauseous, I think I'm going to throw up, burning feeling etc, etc... Alleluia! Glad that's over with for both of us!

p.s. I'm making your eggplant pizza tomorrow! Can't wait!

I can not wait to try this one. I used to love eggplant parmsean of course since my surger there are alot of things I used to love and can not swallow now. Thanks for the recipe.

I made it! Yum! I THINK I used too much olive oil. You know how eggplant absorbs... my MIL always makes fried eggplant, and it's always drenched with olive oil.. ewwww... You gotta get your oil HOT and get in there and out quick and drain on paper towels. Well anyway, I got my eggplant into the pan and I meant to drizzle olive oil, but I ended up pouring out I think too much. Ah well. It was still majorly delish. I'm really sensitive to greasy stuff too, so next time I think I will pour olive oil in a dish and brush it on. My husband loved it and took like half the pan in a tupperware thing as he was heading out to work. It's like eggplant parm, and you could probably even layer it and make a more hearty, thicker dish. I couldn't eat very much of it though! haha!

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.
