Aimee's Surpise Chili

Sooo, I was experimenting today and I totally failed at what I planned to make, but I ended up with a REALLY good chili recipe! :001_smile:

Recipe:

Aimee's Suprise Chili :w00t:

Servings: 1/2 cup

Servings per recipe: 20

1 Canned Roast Beef (12 oz) w/Gravy

2 16 oz cans of Refried Beans

5 Sazon Goya Seasoning Packets (sold in the hispanic aisle)

1 28oz can of Contanida Roasted Garlic Crushed Tomatoes

1 onion, diced

1/4 - 1/2 cup of cheese

Use a deep pan! And remember that part of your goal here is to retain as much of the sauce as possible before step 5.

1. Sautee onions in medium high heat in Pam

2. Add 2 of the Sazon Goya packets

3. Add Roast Beef, and break up the beef into small strands with spatula

4. If in mushies state, like I am, place in blender and puree...

5. Return to pan and add crushed tomatoes

6. Add remaining 3 Sazon Goya packets

7. Taste it and make sure the overall taste is mexican chili-ish. If not, add another seasoning packet.

9. Add 2 cans of refried beans and mix thoroughly.

You now have a choice. Once it is fully heated, add some cheese and you are done. However, the way I did it was to place it in an oven safe drish, sprinkle some cheese and mixed it through and baked it for 45 minutes at 425. Make sure the top is covered in aluminum so it doesn't dry out and that the baking dish is big enough so that the juices don't boil over.

I dished up 10 1/2 cup servings for the future and fed the rest to my husband and stepdaughter. If this is going to be a family meal for ~4, then you won't have leftovers.

Fat: 12

Carbs: 187

Fiber: 26.5

Protein: 55

Calories: 68.5

Fat: .6

Carbs: 9.4

Fiber: 2.7

Protein: 5.5

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
