TakeCareGirl reacted to Nicolanz in Chicken stuffed poblano peppers
I created these tonight and they were so good!
    3 poblano peppers
    1 onion diced
    3 garlic cloves diced
1 can of diced green chilies
    1/2 cup chopped cilantro
    1 can of mexicorn drained
1 pound of skinless boneless chicken thighs
1/2 cup nonfat plain greek yogurt
1 cup of Monterrey Jack cheese
    Cumin
    Coriander
    Pepper
    Oregano
    Salt
Blanche peppers for 3 minutes, let cool and cut in half. Spray baking dish with cooking spray and line up the peppers skin down.
Cook chicken in frying pan season with cumin, coriander, pepper. Let cool
Sautee onion, garlic in olive oil until translucent. Add green chilies, cilantro, all the spices to your taste, and corn and heat through.
Shred the chicken and add to the mixture. Stir in yogurt until the mixture is nice and creamy
Stuff peppers, top with cheese and bake at 350 for 30 minutes.
    6 servings 276 calories, 14 g fat, 13 carbs, and 23g fat
Of course you could make it lower in calories if you use chicken breast and low fat cheese.

This has also been a big hope/goal for me. I have recently been able to order the larger sizes at the Gap, and I just love their dress pants for work. I'm thinking goodbye to LB too!
Congratulations on your success! I see we have similar starting numbers and goals!

It's rather saddening when I'm reading threads on here and find people start bickering. I've posted elsewhere about this, but I think it deserves repeating.
Message boards, by their very nature, do not allow the reader to have the physical cues of eye contact, facial expression, or tone of voice that one has in face-to-face conversations. This can make a poster's intended tone and message easy to misinterpret. It's very important to keep this in mind when reading posts, and to give people the benefit of the doubt when you start to feel upset about something they said or the 'way' in which you felt they said it.
I honestly don't think anyone comes on here to be mean, nasty, or to try to insult people. Perhaps one person doesn't get another's sense of humor, or just misses the real point behind what someone is trying to say. But rather than letting things dissolve into nasty back-and-forth sniping that ends up getting more people upset, administrators involved, and running threads that the original posters made to honestly seek information and advice off-track, there is a simple solution. If you find that you simply don't like the way someone expresses themself on here, you can use the ignore settings. That way you don't have to ever read anything they post again. Simply click on the arrow next to your name at the top right of the screen, click on "Manage Ignore Prefs", and enter the name of that user. You can ignore their posts, signatures, and private messages. Simple solution, yes?
If you get into this kind of back and forth bickering and this solution isn't to your liking, then perhaps you should reexamine your reasons for being here...
    Just my 2 cents worth...

As I was neatening up around the kitchen and pantry today, I realized a couple of things.....
We bought 2 boxes of Girl Scout Cookies from a neighbor this year. Last year,we would have bought double the amount and they would have lasted maybe 48 hours in this house before being decimated. We've now had them for over 2 weeks and still have an entire box left. I truly forget they are there, and never care to have more than one cookie as a treat once a week or so.
Another - my husband's birthday was not too long ago and a friend baked an amazing homemade cake for him. Half of it went uneaten before it had to be thrown out today. Cake in the trash??!! That would have NEVER happened before my surgery.
    This, my friends, is progress!

i loved your post - honeymoon period, it does stop/slow down at certain point, whether 6 months or a year. it eventually does stop.
"process doesn't end for me when i get to goal" - that's the part that people should understand, this isn't something that once you reach a certain weight, or goal - you must still continue to work to sustain your new great weight
trying hard to make this new lifestyle/health/weight last forever - "honeymoon" has ended ...but. not your life
after 21 years - my "honeymoon" might have stalled/slow downed a bit
but i will continue to enjoy my "honeymoon" life with my DH, still working to "maintain" but live with my continued happiness for ever

TakeCareGirl got a reaction from Ms skinniness in Chicken salad recipes anyone?
Saw this on the Skinny Taste blog and thought it was worth a try. It was really delicious - though I think the 1.5 cups of Greek yogurt was overkill for 16 ounces of chicken. I might try just a cup next time and that saves some carbs. Made as is in the recipe, MFP calculated the nutrition per serving (for 8 total servings ) at 116 calories, 7 carbs, 4 grams fat, 14 grams protein!
    Pistachio Cinnamon chicken salad
16 oz cooked shredded boneless, skinless chicken breasts
    1 1/2 cups Fat-Free Greek plain yogurt
    ½ cup pistachios, finely chopped
    1 tsp ground cinnamon
    1 tsp fresh lime juice
4 fresh basil leaves, finely chopped
    1 stalk celery, finely chopped
    1/4 tsp sea salt
    1/4 tsp freshly ground pepper
    2 scallions, finely chopped
Shred cooked chicken breast using a fork; place in a large mixing bowl.
Add remaining ingredients; gently toss to combine. Transfer to serving bowls. Serve chilled or at room temperature. Sprinkle with additional scallions.

TakeCareGirl reacted to ProudGrammy in I would love love love some popcorn...
Dana for years, prior to WLS of course
DH would say to me - "i want some popcorn", lets go to the movies
doc gave me "permission" to have popcorn a few months post op (sorry, don't remember when)
now when DH and i go to the movies he will still have his GIGANTIC tub of BUTTERED popcorn!!!!
(he knows he needs to loose about 75 lbs, but he doesn't have the will or the motivation )
i will get a plain SMALL popcorn (i luck out, not big on butter, NEVER butter on popcorn)
i know movie popcorn is not the healthiest, and i know i COULD bring from home some better popcorn
    but..... i don't want to
the "mental" aspect of having movie popcorn is great for me
for home, i will buy a box of orville redonbocker small popcorn bags that have 100 calories , never have a problem with digestion
i know, i know, too many carbs - but as a treat on an occasion - popcorn won't kill me!!!
tomorrow going to movies - bruce willis die hard sequil
    woo hoo - popcorn city
