I don't eat a lot of what is posted due to carb content.....but if you sift among the meats in there you pretty much get an idea what I portion out and take along for meals at work.

@@KindaFamiliar I have never heard of such a dish. I like lentils and I like peas. I don't know about anchovies? I cook everything! Southern food, Korean food, Italian ect..... I like to learn new things!

What happens with anchovies when you cook them in a skillet like this is that they fall apart and just become that "extra something" in the dish. Especially good in anything with tomatoes. One of my current favorites is anything in Tomato sauce. Later today I'm going to poach an egg in tomato sauce. With garlic. And anchovies.

I'm sorry I missed this party yesterday, I was at a daylong conference. One thing I'm dealing with is that Huz doesn't eat well if I don't cook, and I'm eating so little (and on soft foods still). One thing I did last weekend was cook a big batch of black Beans, and another of brown rice. I put them in 1/2 cup portions in baggies, then in a big bag in the freezer. We always have shredded cheese, salsa, and sour cream in the house, so he can make himself a burrito bowl any time. This weekend I'm going to make some salsa chicken that we can both eat, and I'll freeze some of that for bowls, too.

I have an Instant Pot, which means the Beans took 6 minutes, the rice 22 minutes, and the chicken will be 15 minutes. It's also very handy for cooking Proteins to be soft-foods friendly.

The last two days I've been stuck on this salad. I'm eating it right now. Shredded lettuce, dried cranberries, walnuts & goat cheese with a table spoon of olive oil & vinegar dressing. It's sweet, tangy, creamy.... LOVE IT!!! It has a decent amount of Protein with the goat cheese & walnuts.

Six minutes is for soaked black beans. I'm not adding the time it takes for the cooker to come up to pressure and cool down, but it's still a whale of a lot faster than any other method I've done. And the beans don't fall apart, either. Pinto beans are ten minutes, though if I'm making refried's I'll cook them a little longer, say 12 minutes.

Ok. I made Beans and cornbread in my crock pot this week and it takes a good 6-8 hours on low.

Also I might add, if you guys don't have a bamboo steamer you NEED one! I've been cooking everything in it. You don't have to use any oils or butters if you don't want and it's fast. Cooks everything perfectly in under 20 mins AND vegetables taste 10x better!!! They only cost @ 25 bucks too. I just love the thing. I have a feeling it's going to make this meal prep faster.

I've just done up 8 serves of Atlantic salmon and broccolini with a garlic, chili, anchovy and mustard sauce...

That will be lunch and dinners for the week...

I'd post a pic but it looks like arse...

I've had to squash it into round containers so it's not good...

I'll do pics once I get some different containers...

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
