Green Chile Pork Crockpot Stew

Spicy, hot, comforting, high-protein, and easy. What more can you ask for?

Ingredients

  • 1/2 lb pork cut up for stewing (I’m trying to make smaller quantities, you could use a lb and double everything else below)
  • 2 small chopped roma tomatoes
  • 1 chopped jalapeno pepper OR Substitute 1 can of Rotel tomatoes for the fresh tomatoes and jalapeno)
  • 1/2 c frozen pearl onions OR 1/4 c chopped fresh onion
  • 1 small sweet potato cut into four large pieces
  • 1 can green chile, chopped
  • 1/4 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp chipotle pepper (ground)
  • 1 tsp salt

Method

  1. Place all ingredients into a crockpot and cook on high for 5 hours or on low for 8 hours.
  2. Alternatively, cook in pressure cooker for 10 minutes and let the steam release on it’s own for 15 minutes.

Sounds great, need a few tomatillos for tang though ;)

You are so right! I thought about it when I tasted it. Also of course, what I really want is some posole but that's not happening :P
