Low Carb Recipies

Thanks...I am a diabetic still and watch the carbs and sugar. I should have mentioned it in my post. I also can't do white meat ground turkey or chicken either because I need the fat to get the food down.

I'll let you know when I make it. I already have some ideas of "filler" that are different. I love to cook. Can't wait to make it when I am back from a trip and go to the store to get supplies for it. I have family members who are allergic to garlic which is always a challenge cooking.

Wowee Moma, that is challenging. I've never heard of anyone being alergic to garlic. But the beauty of chili is, you can make it any way you like and it always comes out pretty darn good. Hope you like it !!

I wish they did. Kinda similar but not 100% match.

Anyone try Pork rinds with the band?? I can eat chips with no problems, but want to stay low carb. Scared to try pork rinds. Any experiences?

They taste great but the texture is different, put salt and a little butter and they are so good and satisfying. Potato, no, yummy, yes.

Cilantro id also known as coriender...not the seeds, but the green plant itself.. You might ind it in an Indian market.

Butternut squash is the BEST!!! but I'm not sure if it would be thick enough to make as taters. I'm thinking maybe if you added an egg to it and bake it, it might thicken up? Not sure but heck... I make pies out of butternut squash (better than pumpkin pies imho) and when you bake it it does get thick like pumpkin pie.

If anyone visits hungrygirl.com, they have a great recipe for butternut squash french fries!!! and alot of replacement recipes for many favorite foods. Most of the recipes on the site are done in WW points.

I too spent years - and I mean years trying to follow strict Atkins, here is one of my favorite Desserts. I promise you will think its coconut and not squash. My mom is diabetic and she begs me to make this for her all the time - even though the title is cream pie, it taste a bit more like custard pie to me - but it is good and a great dessert for low carbers/diabetics.

MOCK COCONUT CREAM PIE

2 cups cooked spaghettie squash

1 1/2 cups heavy cream

4 eggs

3 Tablespoons melted butter, cooled

3/4 cup splenda

1 Tablespoon vanilla extract

1 Tablespoon coconut extract

1/4 teaspoon baking powder

To cook squash poke holes in squash thru to center s it doesn't explode. Microwave on high for 10 minutes, turn and cool another 10 minutes. Let cool slightle. Skin will be very easy to cut. Cut in half remove the seeds and then take a fork and get the spaghetti strands/

Preheat oven to 350 degrees. Spray a 10-inch pie plate with cooking oil spray, or butter the plate, I used butter. Gently spread squash over bottom of plate. Set aside.

In blender, or you can use your hand mixer, combine remaining ingredients and process until smooth. Gently pour over squash.

Bake 50 mins. to 1 hour depending on your oven or until a knife inserted comes out clean. Let stand for 1 hour to cool, then cover and refrigerate overnight.

***Now I made this about 10 a.m. one morning let it cool for the one hour and covered it and put it in the 'fridge and it was fine to serve at dinnertime****

8 Servings stats pers serving.

Calories.....211

fat..............19 gr.

poly.............1 gr.

sat..............11 gr.

mono..........5.72

carbs..........4.49

Fiber............0.54

Protein........4.29

Okay - here is another one of my quick Breakfast favorites:

MOCK DANISH

2 oz cream cheese (soften in microwave)

1 egg

1 tblspn splenda

1 tsp lemon concentrate

1/2 tsp vanilla

mix softened cream cheese and egg. Add remaining ingredients. microwave on high for 2 minutes.

I added some 50 fifty jam in the center before nuking... delicious.

You can also add some butter & cinnamon in the center instead of jam

Or cocoa mixed in to give it a chocolate flavor

* it tastes better if you don't totally mix the egg and cream cheese; you get little pockets of crm cheese.

Cilantro is Asian parsley, you can find it in the fresh herb section of your market or grocery store. It is used to flavour Salsa's, Curries, etc.

Hi everyone,

The recipes that you are all posting have you tried them once you have been banded and have they been good for both in losing and in not getting stuck? Just curious?

All the recipes sound so good. Willing to give them a try all at once. NOT

I can say that I have personally tried the recipes I listed, I have also tried some of the posters (NYCHICK) recipes, like the deep dish pizza (my mother loves this one also), I freeze it in individual peices too. I've also tried the egg muffins - so I know they are all good.

I can't say if they would work for the bandsters or not, because I'm not banded yet. I wouldn't see why not? But again, I'm not banded yet. I just know they are low in carbs and very tasty!

Many thanks AngelaT, We do have it here and it is known as coriander. In England it is used in many dishes, especially Indian food. Because of our history we have thousands of Indian, Pakistani and Bangladeshi restuarants and coriander has found it's way into English cooking.

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

      Iʻm roughly 6 weeks post-op this morning and have begun to feel like a normal human, with a normal human body again. I started introducing solid foods and pill forms of medications/supplements a couple of weeks ago and it's really amazing to eat meals with my family again, despite the fact that my portions are so much smaller than theirs. 
      I live on the island of Oʻahu and spend a lot of time in the water- for exercise, for play,  and for spiritual & mental health. The day I had my month out appointment with my surgeon, I packed all my gear in my truck, anticipating his permission to get back in the ocean. The minute I walked out of that hospital I drove straight to the shore and got in that water. Hallelujah! My appointment was at 10 am. I didn't get home until after 5 pm. 
      I'm down 31 pounds since the day of surgery and 47 since my pre-op diet began, with that typical week long stall occurring at three weeks. I'm really starting to see some changes lately- some of my clothing is too big, some fits again. The most drastic changes I notice however are in my face. I've also noticed my endurance and flexibility increasing. I was really starting to be held up physically, and I'm so grateful that I'm seeing that turn around in such short order. 
      My general disposition lately is hopeful and motivated. The only thing that bugs me on a daily basis still is the way those supplements make my house smell. So stink! But I just bought a smell proof bag online that other people use to put their pot in. My house doesn't stink anymore.

      Oh yeah, something I wanted to rant about, a billing dispute that cropped up 3 months ago.
      Surgery was in August of 2023. A bill shows up for over $7,000 in January. WTF? I asks myself. I know that I jumped through all of the insurance hoops and verified this and triple checked that, as did the surgeon's office. All was set, and I paid all of the known costs before surgery.
      A looong story short, is that an assistant surgeon that was in the process of accepting money from my insurance company touched me while I was under anesthesia. That is what the bill was for. But hey, guess what? Some federal legislation was enacted last year to help patients out when they cannot consent to being touched by someone out of their insurance network. These types of bills fall under something called, "surprise billing," and you don't have to put up with it.

      I had to make a lot of phone calls to both the surgeon's office and the insurance company and explain my rights and what the maximum out of pocket costs were that I could be liable for. Also had to remind them that it isn't my place to be taking care of all of this and that I was going to escalate things if they could not play nice with one another.
      Quick ending is that I don't have to pay that $7,000+. Advocate, advocate, advocate for yourself no matter how long it takes and learn more about this law if you are ever hit with a surprise bill.
