When you get to the soft phase of the post-op diet, a lot of people enjoy mashed potatoes. I found something better tasting (in my opinion) and healthier (beta-carotine)... a baked sweet potato.

I take the potato and make an "X" in the top and then place it on the bottom oven rack. Bake at 475 degrees for 45-55 minutes (depending on size). When you take it out, it's very soft and the skin easily peels away. The inside is like sweet mashed potato... very moist. I sprinkle a little salt on top and enjoy.

What a great idea. I had nixed the mashed potato, but sweet potato has good stuff in it. I really like it better.

One of my favs is slicing the sweet potato, putting the slices on a foiled lined pan and "baking" them on the grill until soft ... about 20 minutes ... you can sprinkle them with salt, pepper or even a little garlic ... they are very tasty.

I love sweet potatos as well. Thanks for the great tip about the grill, never thought about that. I just usually nuke mine and eat the right out of the skin, sometimes I eat the skin too.

I like the grill idea because this time of year in Phx I try to avoid the oven as much as possible.

I grill 12 months a year. We even did when we lived where it might snow every now and then. I cannot eat a steak that was not grilled.

We grill out alot - especially once the temps start to rise in Las Vegas ...no need to heat up the kitchen if you don't have too and we've figured out a way to "cook" a lot of things on the grill ... and I agree with Rosebud, can't eat a steak that hasn't been grilled ... just not the same. Besides, in Las Vegas, it's never really to cold to grill out ... we even grilled out in the dead of winter in Indianapolis ... provided we could find the grill through the snow!

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
