Spaggetti Squash

Hey banders i have a question as usual and to to tell you guys about this mexican recipe i read about. A few months before my surgery i boughrt a spaghetti squash and im not a squash fan, so i let it sit in the frig for so long and let it go bad. Needless to say it went bad. But right i miss spaghetti and Pasta so ima b brave and try again does anyone have any good recipes or tips. And then i saw a low carb recipe to make a taco shell. U basically take a 3rd a cup of cheese and put it on parchment paper and micriwave it till cheese is melted and bubbly. While on the paper from the cheese around q round object to from a taco shape. When it cools take parchment paper off and load it up with ur favorite taco ingredients.

I like to roast a split spaghetti squash in the oven at 350 for about 45 min. Then I scoop out the "spagetti" and set it aside.

I then de-seed and cut up a yellow squash, a zuchine, a onion, a green pepper, spinach and saute' them with a little olive oil and garlic until tender. when they are tender, I return the spagetti squash back to the pan.. ----I know you said you don't like the squash as much, so you may want to trade them out for others that you prefer. Mushrooms, broccoli, carrots, etc.

Then I make a simple "spaghetti" sauce of tomatoe sauce with italian spices and garlic and the dry parmsean sprinkle cheese and lattle a cup or so of sauce into the veggie mix and coat the veggies.( I sometimes add hamburger, turkey or chicken if I need the protein)

I then spoon the mixture back into the hollowed out spaghetti halves, top with a little more sauce and a slice of provolone or some other italian cheese. and place it under the broiler until it bubbles.

Serves 4.

I think a low carb tortilla would be better than the cheese. Cheese has a lot of calories.

My family loves spaghetti squash...I used to fix with spaghetti/meat sauce like the Pasta style spaghetti. Really yummy

We love Spaghetti squash here too. Made with homemade meat sauce is how I love it most, I usually just soften my squash in the microwave. I cut it in half, de-seed it, turn upside down in a plate covered with paper towel and cook till softened inside. Then shred out with a fork.

It's also really good once cooked to throw in a sautée pan with some roasted garlic, diced tomatoes and some spices such as basil or oregano, cook for five minutes or so. Yum...

Really anywhere you would use Pasta, you can use the squash.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
