Veggie Recipes to spice things up???

Just went to the farmers market and got some zucchini, squash, spaghetti squash and a whole lot of basil (smelled so good I couldn't pass it up!) Normally I just bake or grill the veggies with a little olive oil and salt and pepper. Any new ideas other than simply grilling or making pesto?

Ahh I love summer farmer's markets!

...I can smell the basil now, and it's on the otherside of my house lol mmmm :)

Oh you are making me hungry and inspiring me to go to the farmer's market next week! I LOVE grilled veggies - do you grill them in a pan or on the BBQ or George Foreman?

I read a while back about a recipe using grilled eggplant and portbella mushrooms. I am thinking a stuffed pepper might be good with lots of veggies and your choice of meat.< /p>

Recently I have been addicted to a spinach salad with LF feta cheese, pecans,dried cranberries and sliced strawaberries with low calorie rasberry sald dressing- I had this for lunch for a week and lost weight that week!

I'll cook up zucchini, squash, broccoli and cauliflower, then cook it with ricotta cheese, Pasta sauce and some cheese in a casserole or baking dish. I've been really pleased with it every time I've made it.

We made a lasange with zucchini strips instead of noodle. I used ground turkey for meat and loaded it up with squash, mushrooms, onions, tomatos. It was awesome.

Let' see..since I love it all...I can mention a few ways...

Zucchini bread, ,,fried zuchini(I mean come on we don't have to give everything up)....I like to grill it on the GF with olive oil and salt and pepper. Spaghetti squash can be scraped into strips just like Pasta and ate just like spaghetti. Squash and zucchini can be peeled, boiled and mashed just like potatoes with milk and butter. Zucchini cut thin and steamed or raw just a bit goes great on a sandwhich. Basil can be lightly fried into chips in olive oil and they are crispy and yummy. I love pesto; I use it as a sauce or on a wrap, etc. I had a wrap the other day with basil in the wrap bread part...it was strong and delicious.

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive). For straight protein look at Bulksuppliments.com ..they have really good whey proteins and offer auto ship plus they test for purity. No taste or smell...

        Fairlife has strawberry, vanilla and of course chocolate. No more calories than other protein drinks. Stay away from Premiere, they're dealing with lawsuits due to not being honest about protein content.
