Question about chicken pot pie!!!

I love chicken pot pie so I have learned to make it by scratch. Does anyone know if it is really bad for you since I have started leaving off any crust and not using any potato's. I also use corn starch instead of flour to thicken it. Instead of butter to fry the onions in I use canola oil. I am trying to make a healthier version because I like it so much.

May be the greek in me; but I only use olive oil. From what I read it's the best oil you can use for cooking etc. You might want to consider a low fat or fat free cream of chicken soup; to keep the calories and fat down.

Firstly, its my opinion that if you eat in moderation, nothing is horribly bad for you. There are things that are worse than others, but if you eat them in moderation, its not a huge deal. If you're eating 1500 calories worth of chicken pot pie everyday, then yes, it will be really bad for you.

Can you post your recipe? I'm really good at breaking down recipes and minimizing the calories (I love to cook, so maximum taste with minimum calories is my hobby :thumbup:). One suggestion off the top of my head is get a non stick cooking spray to cook the onions (you can get an olive oil one). You'd be surprised how little oil you really need to cook. I'm making cioppino tonite and I just sauteed 4 chopped shallots, 4 garlic cloves, one huge chopped onion, and a really big fennel bulb (chopped) with less than a tablespoon of olive oil. It was like 2 pounds of veggies lol. It can be done! Post the recipe and maybe I can help you with it. :lol:

Olive oil is one of the healthiest oils but it is not good for cooking at high temps. Apparently something happens to it that make sit carcinogenic. Other veggie/sunflower oils are better for frying and cooking.

I love love love chicken pot pie, too! I am not big into cooking, tho.....but I would try any low calorie/healthy recipes you all can come up with as it would be good for my family, too. Usually I end up going thru Boston Market on the way home - I don't eat the crust anyway, just about half the inside.........I guess I figure as long as I haven't had 1000 calories the rest of the day I can splurge every once in awhile. :rolleyes:

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?
