Now that I am down 51 pounds from my heaviest, I have some new found courage to explore going back to school to learn a trade. I am 41 years old and spent most of my adult life working in Information Technology. I've fallen a little behind the times since going on disability. Now that I am feeling well enough to return to the work force, I am finding it increasingly difficult to get hired. Information Technology is a young man's game. Well, now that I've lost some weight it dawned on me that I could go to a trade school to learn a trade and hopefully get re-employed in an entirely new career field. I am thinking about going into the Automotive/Diesel Technician field or maybe becoming an electrician. Previously, I think I would have written this off due to weight and movement issues. I found three nearby trade schools and went to an open house yesterday. I was pleased to find other people my age looking to train for a new career. I just have to see what makes the most sense. I am equally interested in both fields.

I guess everyone is different, I’m just about a year out...two eggs and a pita would make me stuffed and almost wanting to throw up. I can eat one egg and maybe 1/2 slice of toast in one sitting. Sometimes just the egg. I mostly eat plant based, so if a raw salad, maybe 3.5-4 oz tops. If a bean/grain dish of some sort, 2.5oz tops. I can definitely eat more now (not at one time though) then before. So even though I may have 2 oz of some food, I may eat another ounce 1-2 hours later. So, I’m pretty much eating throughout the day.
sorry I don’t have any pics to share!

I fell in to the Patches and after about a week I felt awful. This was in the early stages of my post op too. So, I quit them and went back to the nasty bariatric Vitamins and felt instantly better! Sooo....I’m not sure if all the hype of how they work is really because some folks are actually getting their dietary needs through food or they’re still living off the “stores” they had, or they’re just thinking they’re bodies are doing better (all in the head). Some say their blood work is proof but I haven’t seen a copy of anyone’s blood work to show it. Could also be a bogus testimony on here to get folks to buy them. Whatever the issue, they do not work for me. Finally almost year out and only need two Flintstone chewables, one b-12, one b complex, and my Calcium. I can live with this.

Thank you for this...but maybe change it to say COMPLEX carbs to call your friends? So many people lump all the good nutritious complex carbohydrates with the simple ones. It’s really sad. My diet is comprised of about 90% of these...and they are indeed my friends. 😊

A day of cooking for me. Guess I was in the mood! So dinner is now in the oven. It’s a new recipe I’m trying from budget bytes, vegetarian. But you can omit to cheese and make it vegan or use vegan cheese, I should think. Very rare that I make a recipe twice, so imagine doing mostly plant based for almost a year now and having a different dish almost every single time! Lots of variations. Anyway, back to the recipe. It’s a vegetable polenta casserole. I picked at each of the layers, pretty good taste separately, so I’m anticipating a good turnout with it all put together. Here it is:

imagine the veggies being poured on top of the polenta/spinach mix and then the cheese spread on top. Sorry, I didn’t bother with a pic of it put together. Anyhow, it’s in the oven now. Smells pretty good in here . 😊

Yum!!!! I just made this vegetarian recipe. Kind of threw it together on my own getting the idea and ingredients from another recipe. So I sautéed an onion, mushrooms, sun dried tomatoes, and kale. Added salt and pepper and feta cheese. Didn’t even think about garlic...man, that would have been good. Anyway, I whisked some eggs and thinned it out with some almond milk. Sprayed the muffin cups and filled them with the veggies and added approximately 1/4 cup of the eggs in each cup, maybe a little less. The first batch I put the cheese on top (see pic). The second batch I mixed the cheese with the veggies for more we’ll rounded tasting bite. Baked for about 20 min on 350. My thrown together recipe made 24 of them. They’re cooling off and waiting to go in the freezer. I managed to try one (I say that cause I had already eaten) and did but without being super uncomfortable (I still haven’t learned!!!). It is sooooo good. Nice and easy meal prep for breakfasts, that’s for sure!

Hello all...made this awesome Soup today. I do not like potatoes in soup, or much of potatoes at all, unless it’s sweet potatoes. But anyway, I used gnocchi instead. Hubby LOVED it and so did I. Yum!

'The Dreaded 3 Week Stall'...yep happens to nearly everyone. Your body just had major surgery, has inflammation and healing to do, and adjustments to low calorie consumption, etc. Be patient.

Google three week stall. This happens to everyone. Focus on following your plan and continuing to change your relationship with food. The weight will come off in its own time.

What really counts is your measurements in my opinion, I bet they’re moving. Don’t worry about it, it’ll drop and remember you’re fresh out of surgery, your body is healing too. Classic 3 week stall....don’t stress.
