Has anyone used quinoa? My friend recommended it as a good source of Protein and Fiber, so I bought a box, but now I'm not sure what to do with it. Someone wrote in about an easy chicken chili recipe a while back, and I just made some and added 1/2 cup of quinoa. It gives it a nice texture and thickens it up a lot too. Anyone know of anything else I can do with the rest of the box??

It's not a diet food, and certainly not low carb. However, I added a 1/2 cup to an entire pot of chili. It added 48 g net carbs to the pot, and about 300 calories, with 10 g fiber and 10 g Protein.< /p>

Quinoa is a grain so it is definately a carb BUT its a complex carb. That makes all the difference to your blood sugar arc. Its also a superfood rich in loads more things than they put on labels.

I personally love it. Ive never really liked rice and I find that quinoa is a great substitute. I make it with Better than Bullion, for flavor. Ive served it with veggie or turkey stir fry. Ive heard of it being served as Tabbouleh (chilled or warm).

I read somewhere that if you set them in Water and let them germinate overnight you double the nutrient value.

Where do you find this stuff? Is it in the grocery store by the rice?

I get mine in the bulk foods section of the grocery store. One important thing to know is that Quinoa is a COMPLETE Protein - it is not like other grains that need to be combined to get the full protien, so the protein is complete in itself - like the protien from meat. I use it mostly as a rice type side dish. My sister eats it like oatmeal for Breakfast, it is really versatile.

All of you have made some noteable comments. I guess I wasn't so "open" minded at first, because I was looking at the quantity of Protein. HOWEVER, the benifits are very noteworthy.

Maybe later down the road in my weight loss this is something I should try.

I didn't know but love the fact that it is a complete protien.

I will have to look for it. I basically only shop at Walmart so I am not sure where to find it.

      Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.
