Mashed Cauliflower

3 cups cauliflower florets

2/3 cups skim milk

4 tablespoons fat free sour cream

Salt and pepper to taste

20 sprays of artificial refrigerated

butter spray

(i.e. I Can’t Believe It’s Not Butter)

  1. Steam cauliflower for 10-15 minutes until very soft.
  2. Puree cauliflower in a food processor until smooth.
  3. Add milk, sour cream, salt, and pepper to cauliflower and
    blend until smooth and well combined.
  4. Put mixture in microwave safe dish and heat for 2 minutes;
    spray with butter spray and serve.

Calories: 202.17

Protein: 15.51g Fat: 0.92

Carbohydrates: 35.52g Cholesterol: 13.27mg

Fiber: 7.5g Sodium: 224.93mg

I know some of you are thinking, yeah right but I was telling my husband how some of the banders on here have talked about having this in place of mashed potatoes. He decided to try it the other night with our roast instead of the mashed potatoes (No, I didn't eat any, still on liquids! :sleep:). Surprisingly enough, they all LOVED it! The 14-yo and 12-yo were almost licking their plates and they are pretty die-hard potato fans. So, although it sounds crazy, try it, you might like it! :)

Also, he didn't do anything as elaborate as Alex's recipe, he just cooked it to pieces, added 1 tbsp butter, and mashed the fool out of it. So, I'm guessing Alex's version would be over-the-top! :eek:

I've also heard that mashed cauliflower is a good way to thicken Soups and make them "creamy" rather than adding flour, butter and milk. I haven't tried it yet, but I plan to.

This is an easy sub for potatoes and my family totally does not miss the potatoes when i make my full fat version. :) and for my diabetic husband, cauliflower is MUCH better carb-wise, and for EVERYONE, it is much healthier....

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
