Stage 2B Diet Questions

Hello all,

I had surgery on the 18th of the month and recovering beautifully. This Stage 2 diet is really starting to get old, but thankfully I go back to see the Surgeon and the nutritionist on Tuesday. After this visit, they should be advancing me onto Stage 2B. Geisinger's definition of Stage 2B is this: 1 Large Egg, 1/2 Cup Egg Substitute, Low Fat or Fat Free Ricotta cheese, and Low Fat or Fat Free Cottage Cheese. I was wondering if anybody had some suggestions as to different ways I can enjoy the eggs, the Ricotta Cheese, or the Cottage Cheese...I know I can't mix fruit into the Cheeses, but as far as the eggs, I know I can make a little egg spread (hard boiled eggs smashed up & mixed with a little light mayo, hint of salt, a bit of pepper, and a small scosche of Splenda for a sweet flavor). Any other things to try as far as Stages 1 & 2 are concerned?? I've had everything on the list of approved things and I'm getting bored.

Somewhere on here there's a recipe for ricotta bake, it's ricotta, eggs, seasoning, and spaghetti sauce. Baked until bubbly. It was my first 'real' food and it was delish!!
