Hey All

She's ba-ack..... OK I have read everything - and I love all of you - but I will never make it to personals in what is left of my lunch hour.

Wednesday - we grabbed a slightly earlier flight home from NY on standby - made it home at about 5:30-6:00. DH and I at dinner at Ojeda's (mmmmmm - mexican food) and headed home for some quality time.

Thursday - a little grocery shopping, sleeping late and lots of quality time with DH.

Friday - my big 42nd birthday.... slept late, drove up to OK to the Casino and spent too much money eating at the buffet & playing the penny slots. That place is pretty cool - but I have never been in a Casino that doesn't serve alcohol before... I didn't think they even had those. :] Of course it is the last bastion of the hardcore smoker - so I had to wash my hair & clothes when I got home to get rid of the delightful Eau d' Ashtray. Despite the second hand smoke and the complete lack of alcohol, a grand time was had by all.

Saturday - Shopping, shopping and more shopping... We had lunch at Ikea and picked up a corner-shelf for DH's Office. I also got a lovely skirt at Walmart, which I am wearing today.

Sunday/yesterday - reading, tv and other forms of hibernation.

Overall, it was a truly fabulous 4-day weekend. Thank you all so much for my Birthday wishes. I couldn't even get online while I was out - the signal was either very weak, or gone entirely. I was only able to read a little before the signal cut out.

I am really celebrating my BD again today. My desk is festively decorated with purple, yellow and red balloons and streamers. Of course, my co-workers have spent the last 45 minutes shooting rubber bands at the balloons with varying success in their attempts to pop them... Can you tell I work with a bunch of younguns?

I also intend to eat cake - so don't try to talk me out of it.

*sigh* Talk about the road to hell... I had every intention of being good and pure for the entire month of January. Yeah, right. Whatever.

So, it looks like I may have to revise my signature UPWARD if I can't get the 4 lbs off by the time I go into my Doc for the annual check up. Let's hope that I lose 4 lbs of puffy in the next couple of days, OK?

I guess going to the gym tonight will help with that. *sigh*

Well, my lunch hour has sped by, what with reading the 4 days worth of news. I hope our sickies are feeling better.

I am glad Beanie had a such a wonderful 4 day Birthday. Eilieen Happy Belated Anniversary to you...

Uneventful weekend. You know the usual cleaning, Laundry and more cleaning. I did make Chicken Alfredo for the 1st time in my life. I loveeeeeeeeeeeee Italian food. I made the Alfredo sauce myself and my family loved it. Next I want to go the healthier route and make the Barley soup but am tempted by the Tamales calling my name. I really want to try the Muffins I am reading about. Is there a reciepe somewhere back?

The dog licking makes me laugh. Teq always seems to love licking himself and looking at you while he is doing it. When we first got him and would send him out to do his business we never saw little poops until one day we saw why! Gross --

Anyway better get back to work - I will have to post when I have more time. Oh yeah sinus is better - I used the Musinex for chest and sinus. Thanks

Just wanted to pop in and tell you the soup was great! I ate it for lunch, took a thermos of it and licked it all back! :biggrin1: :biggrin1: :biggrin1:

Sherry thank you for the recipe. Also, my DM had a dog that everytime she got sick he got sick. If she got a sore throat so did he. She would take him to the vet and he gave the dog the same meds! It's crazy, but true!

chocolate eclair cake. Rich chocolate cake with creamy pudding filling - Mmmmmm. I managed to give most of it away - so I don't have to eat more than I already have.

Oh - and for those of you who actually LIVE in New Jersey - I am scheduled to be back in February: February 19 - 23.

Gosh, that sounds so gooooooood~ enjoy every bite of it!

Ok, I thought I would post this one for you. I fixed it a few times when I was on WW, and we liked it. It's super easy to fix too!

chicken Baseballs

3 oz. fat free cream cheese softened

2 tsp light margarine, melted

1/4 tsp. salt

1/4 tsp pepper

2 Tbsp chopped onion (I suggest increasing this amount)

2 cups cubed cooked chicken

1 8 oz can reduced fat crescent rolls

2 Tbsp skim milk

In a blender (or by hand) combine the cream cheese, butter, salt, pepper, milk, onion and blend good. Pour mixture over chicken and stir. Separate crescent roll dough into four rectangles, and seal perforations. Spoon 1/2 cup of mixture into center of each. Pull opposite corners of dough to center and seal. Place on an ungreased cookie sheet and bake at 350 degrees for 20 minutes.

Easy and yummy, what else could you ask for?

Ooo that does sound yummy Betty and Ummm Bean...I'm with Betty..that cake sure sounds yummy! Been a while since I've had cake :D I did make a chocolate chip banana bread this weekend though..but the guys like that more than me.

Here is the recipe for the Crock Pot chicken Cacciatore:

Crock Pot Chicken Cacciatore

1 1/2 cups diced onion (I cheat and buy it frozen)

1 cup diced chopped green pepper (I cheat and buy it frozen)

1 lb can tomatoes (I used crushed cause the guys hate chunks)

1 (8 oz) can tomatoe Sauce

1 tsp salt

1/4 tsp pepper

2 tsp crushed oregano

1/2 tsp basil

1/2 tsp celery seed

1 bay leaf

1 cup dry white wine or apple juice (I used the wine){optional}

1 chicken, cut up (or use browned chicken breasts cut into smaller pieces)

stir it all up and cook on low for 6 to 8 hours. If you use cut up chicken breasts, cooking time can be reduced.)

Thats the recipe but, I also added 1 jar of spaghetti sauce and 1 14oz can of italian tomatoe. One hour before we were going to eat I threw in a 1 lb box of uncook wheat penne noodles and they were delicious and tender and they soaked up some of the liquid to make the sauce thicker. But if you don't want to do that you can make rice on the side and serve it with that. It was a hit with everyone. I really stirred up the chicken so it shreadded too. Enjoy!

Well, chickies, thank goodness ya'll are havin' a good time!

Love the recipes...I think I need to try both the baseballs and cacciatore (I know I spelled that wrong!)

So, just running around doing the SAHM thing...yesterday was cooking, basketball game, and meeting for DD's school until 8PM.

Today (check this out, Darcy!), one of my mom's quilting buddies is coming over in a little while. We are going to lay out a quilt my mom started, and her quilt friends finished...it's a Dresden plate quilt. All the blocks are finished, and we're going to decide how to lay it out for the finished quilting. Maybe I'll get to help hand quilt it! I have to learn, but they are going to teach me. Cool?!

Okay, back to your fun...I've gotta go make coffee for my quilt friend. I'll see ya later!

Hey Cindy..that's just awesome about the quilt. It will be such a special one too because your mom started it and you're finishing it. Wow....that's just fantastic and to think of the wonderful memories you'll be thinking as you're all cozied up underneath it. When you do hand quilt it....I think it would be very special to quilt in things that you and mom shared that were extra special. Oh please show us a picture of your work in progress :D
