Vegetable Quiche cups (add ham if you like)

My Friend gave me this recipe and I made them today, they are YUMMY and very low in carbs. I baked them for about 8-10min longer than the recipe suggests (at my friends instruction), and it made the bottoms golden brown so it tastes like it has a crust on it! I also doubled the recipe and am going to freeze them in two's so I can pull them out for a easy Breakfast prior to work. And two of these "muffins" are equivalent to one cup of food! Next time I am going to finely chop up some fat free ham to add a bit more Protein.< /p>

1 (10 ounce) package frozen chopped spinach

3/4 cup liquid egg substitute

3/4 cup low-fat cheese, shredded

1/4 cup green pepper, diced

1/4 cup onion, dice

3 drops hot pepper sauce (optional)

Directions:

Preheat oven to 350°F.

Microwave spinach for 2 1/2 minutes on high (or thaw in fridge overnight) Drain excess liquid (this is an important step, so be sure to really squeeze out the excess)

Spray muffin pan with cooking spray.

Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well.

Divide evenly among muffin cups.

Bake at 350 for 20 minutes, until a knife inserted in the center comes out clean.

Fat 6g

Protein 18g

Carbs 6g

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
