Grass Fed beef sandwich with eggplant as bread

Grass fed beef ala eggplant

Ingredients:

6 oz grass fed chop meat

2 1/2 inch slices eggplant

4 oz florida avocado

2 farm fresh eggs

3 tablespoons cilantro- i use a ton!!

Salt and pepper

Pinch oregano

EVOO- ( i use a mister :)

In a bowl mix your six oz beef with salt, pepper and oregano.

Make two equal patties

Spray your evoo on both sides of

Eggplant slices add salt and pepper

Grill each side about 3 mins on medium

Now start to cook your two burgers.

I like mine rare, the quality of grassfed is amazing so I dont want to lose any taste by overcooking :)

While grilling get your two eggs cooking between low and medium.

Remove eggplant and garnish eggplant slices with cilantro and a 2 oz portion

Of avo put burgers in top of avo, sprinkle cilantro on top

Add egg on each burger and you have the most amazing lunch!
