  1. Meals today- egg white and cheese breakfast tortilla salad with chicken and jammy egg vegetable miso soup made a chocolate pecan mousse for dessert and thought I took a picture but it was just a blur. ??‍♀️
  2. Very seldom do I eat pasta but after making it for the kids tonight it smelled so good. Started by roasting most of the Roma and Campari tomatoes, some scallions m, and some garlic bulbs. Used the garlic in both the sauce and the cheesy garlic bread. And then cooked the Pasta in the sauce and some chicken broth.
  3. Meals prepped yesterday for today- salad (the one without egg is for my oldest) and teriyaki chicken and veggies with rice. Also, a bonus picture of the pasta salad with turkey pepperoni the kids had for dinner.
  4. Went to a Mexican restaurant by myself yesterday. It’s weird having actual days off and trying to fully my day with stuff to do. Anyway, I present to you this monstrosity! ? I totally took home leftovers and actually ate some of them for dinner.

  8. Yes, but also YES! Kids have had some form of pizza 2 nights in a row (pizza rolls with salad yesterday and chain restaurant pizza tonight) and tomorrow is also looking like a high chance of pizza related food… I will have salad every night if I have to not think about cooking until after new year’s!
  9. Last night’s dinner- rosemary olive oil bread with garlic herb goat cheese, sliced Roma tomatoes and balsamic reduction.
  10. Yesterday’s Christmas dinner- venison tourtiere, glazed carrots, zucchini and tomatoes sautéed in Italian dressing, cucumber tomato salad, loaded mashed potatoes, and wild rice. I shared my plate with my 7yr old and still didn’t eat it all.
  11. Just another random food photo dump. More Asian chicken kelp noodles, balsamic chicken and veggies. Surimi salad and shrimp (only ate one shrimp). Stir fried tofu with zucchini, onions, tomatoes, and mushrooms. Egg and cheese English muffin with tomato and cucumbers. Chicken and veggie fajita rice. Greek yogurt, caramel rice crisps, and blueberries.
  12. Mexican food offers refried beans. Italian offers the filling of ravioli/stuffed shells/lasagna. Indian food offers a variety of curries. With more of the chain restaurants your best option will be meatloaf (if offered), soups, or chili.
  13. Meals yesterday- Lunch was an Asian noodle bowl with kelp noodles, peanuts, bell peppers, and cucumber. A hot water soak with a little baking soda is definitely the way to go. Dinner- chicken fajitas
  14. Because I’m sure no one wanted to see the same vegetable soup for days on end, here’s the other stuff I’ve managed this week. Aside from the soups I really didn’t finish anything else. Eating just takes too much energy!
  15. The only time my oldest makes an appearance in the living room is when she’s sick and needs comfort. She told me she had “the Covid cough” like last year. Sure enough positive. She’s been wearing a mask anytime she moves around the house but I’ve now got it along with my 10yr old.
  16. Made stocking cookies with the kids last night. They told me I had an unfair advantage. ??‍♀️ Then my oldest thought it would be great to share Covid for a second Christmas season in a row. So protein shakes and soup it is!
  17. Lunch- baked salmon with sautéed mushrooms, onions, tomatoes, and peppers. And then dinner- cucumbers, tomatoes, and thinly sliced onions in red wine vinegar
  18. Dinner last night- Italian roasted cauliflower and cheesy salsa chicken. The chicken was okay, no matter how I cook it chicken always seems dry. ? And then the kids made gingerbread houses!
  19. This sounds amazing and like hot and sour soup but spicier with noodles. I make my own hot and sour soup at home when we aren’t ordering Chinese food so I’m sure I could make something similar.
  20. Definitely the not paying the “clothing tax” anymore. Also, no double seats on flights, less in prescription costs, and my personal favorite- better car fuel economy! It’s crazy but instead of filling up every week I fill up every 2 and I’m driving the same amount or more.
  21. White wine and garlic mussels with artichoke hearts. Ate about roughly half of each (aside from the sauce)… a surprisingly high amount of protein!
  22. Y’all DO NOT add kelp noodles into just boiled water with baking soda or you’ll end up with peanut noodle soup. ?‍♀️ Lesson learned. At least they were soft…. ?‍♀️ Maybe next time I’ll just use really hot tap water. Also, ate 3 bites and was grossed out so had cereal with a protein shake instead.
  23. Dinner last night- leftover rolls from thanksgiving, apple butter, and a cheese wedge. Lunch today- a simple Greek salad and a dish made with onions, garlic, mushrooms, northern beans, and pork meatballs. (460 calories, 29g protein) And what everyone wants to see- today’s breakfast! A 1/2 cup skim milk milk in my chai and an Andes mint. ?
  24. Breakfast for dinner last night- 1/2 cup oats, 2tbsp pecans, and 1/4 cup homemade apple butter. The extra water is because I didn’t add enough the first time to the oats.
