Spinach Bars

SPINACH BARS

makes a 9x13 pan full - could easily scale down but I was taking it to a meeting and I like to use up packages.

Ingredients:

1 3/4 c. eggbeaters or 7 large eggs (nutr. data is for beaters)

1/2 c. skim milk

1.5 c. ff plain greek yogurt

1 .5 tsp salt

2 tsp minced fresh garlic

1.5 tsp baking powder

1 c. whole wheat flour

pinch red pepper flakes

10 oz pkg fresh baby spinach leaves

8 oz pkg shredded part skim mozzarella

7 oz pkg lite feta cheese, diced

1 onion, diced

optional: 1 c. chopped mushrooms or red pepper (roasted or fresh)

DIRECTIONS:

Preheat oven to 350 degrees or 375 if using an air filled pan.

Mix spinach, cheeses, onion and any of the optional ingredients in a large bowl. In a separate large bowl whisk all the other ingredients, pour over spinach mixture and mix well. Pour into a 9x13" pan greased with Pam.

Bake for about 40-45" (top should look dry and the edges just beginning to brown.

Serve warm - tastes so good a cross between a crustless quiche and a meatless strata. Like many quiches it would probably taste good cold - just haven't had the opportunity to try it that way yet.

Depending on how you cut it here is the nutrition data:

20 servings (5x4) / 16 servings (4x4) / 15 servings (3x5)

Servings: 20, 16, 15

Calories: 91, 114, 121.5

Protein (gm): 11, 13.3, 14.2

Fat: 3.4, 4.2, 4.5

Fiber 1, 1.3, 1.5

ok kc - i played around a bit; here's what i did:

1pckg frozen spinach - thawed & drained well

1 egg

1/3c bread crumbs

1/2c ground pork - browned

mixed the above & put in a loaf pan sprayed w/pam. then added 2 slices of swiss cheese on top. (2 servings - 1 slice of cheese per square)

bake @350 for 25mins - cheese is bubbly.

This sounds heavenly. Just my speed!!! I'm definitely going to try it. I have a recipe for turkey sausage and cabbage quiche that is to die for. I thought it sounded wierd when I heard of it, but it's the best ever!! I'll post the recipe this week.

yes - please post; dh and i eat a lot of cabbage.

i'm making a warm nappa cabbage slaw tonight - kc, i'll post in the food thread if it's good:)

I can't wait - hope its good - I love napa cabbage slaw (especially with a little oriental vinagrette!!) - never thought of it warm though.

That sounds soooo good! - Think I might have to use seasoned rice wine vinegar and add some juliened red bell pepper and sugar snap peas.

      Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.
