Whole wheat pasta with spinach tomato sauce

Recommended Posts

If you can tolerate Pasta, this is a good healthy recipe you can feel good about eating.

1 box whole wheat Pasta (spiral shaped)

2 tbsp. extra virgin olive oil

1 small onion, diced

2 cloves garlic, finely minced or grated

1 can diced tomatoes, drained a little

2 cans Tomato sauce

tomato paste (optional)

about 1 cup of spinach, thaw and squeeze liquid out with a kitchen towel

dried parsley and dried basil

Parmesan cheese

Cook pasta according to box instructions and drain. While pasta is cooking, in a sauce pan, heat oil and sautee onions until almost translucent. Grate in the garlic and let cook for a few minutes. Add diced tomatoes and tomato sauce and stir. Add squeezed spinach and stir together well. Add dried parsley and basil (to your taste) and stir. Let simmer for about 10 minutes. You can add some tomato paste if sauce is not thick enough. Add pasta to sauce mixture and stir. Add parmesan cheese and stir together well. Enjoy!

Here's another whole wheat Pasta recipe that is soooo easy, my sister made this with ravioli, but I just use plain Pasta.< /p>

1 box of whole wheat pasta (spiral)

1 container of store bought pesto or you could make your own

Parmesan cheese

Cook whole wheat pasta according to box instructions. Drain pasta and put it back in pot it was cooked in. Add pesto (add small amount and mix, keep adding until your liking). Add whatever amount of parmesan cheese you want, mix well and serve.

Do you have a recipe for making your own pesto? I know it's basil and YUMMY, but I hink it would be fun to attempt making it!

I use the store-bought kind. It's called Buitoni Pesto with Basil. It's very good and it's less work for me, lol!

Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!

Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.
