Jenelizzas Crab Cakes

Just made these and omg they are good!! Purée up the ingredients super well and for me I just cut off the sides so no real chewing! Was amazing thanks for another hit jen! Ohh and the best part it's got crab meat and egg so Protein rich!

Thanks!! Glad you like them! I'll post the recipe when I get home but here is the nutritional info.

I like that it is puréed before baking so it doesn't look like mush.

Here's the recipe:

These were really just eyeballed measurements. So you might want to tweak it to your preference.

1 egg

16 oz can crab meat

3 tbsp light mayo

2 tbsp either old bay (by far the best!) or phillips seasoning

1-2 tbsp parsley depending on your preference

two twists each of salt and pepper or to taste

1-2 tbsp lemon juice

Optional 1 tsp dry mustard

Combine all ingredients. If in puree phase this can be mixed in the food processor which means you can save money by buying the backfin or claw meat. There is no point pureeing lump!

Use ice cream scoop to make 1/4 cup servings. I like to sprinkle old bay on top. Will make 8 servings. Broil about 8 minutes or until done.

I made them in foil muffin cups so they can be individually frozen and pulled out for quick work lunches.

Great with a little yellow mustard on the side!

And for less than 60 cals you can't go wrong! I made two batches and froze them for quick lunches or dinners! Crab meat goes in sale pretty frequently so that's always a good time to grab some :)

Did you have these during the puree foods portion or did you just happen to puree them?.... if they get broiled how are they still pureed and not solid?... They look delis and after all this Soup and liquids, I'm dying for something I might actually have to chew for a bit
